dinner ideas and recipes please?
so my boyfriend and i live together and lately we have been eating at home instead of eating out. so, i need some ideas and recipes for dinner. we've already made: spaghetti, fettuccine alfredo, italian chicken, tacos, steak, pizza and salmon.
so if anyone can give me any cheap, easy, quick recipes i would greatly appreciate it! =D
neither of us likes mushrooms, he doesn't eat mac and cheese and i don't eat tomatos (except for things like spaghetti sauce)
oh, and does anyone have a simple recipe for Salsa Chicken?
You sound like my boyfriend and I! We both work at a restaurant so when we get home from work, we're generally hungry but don't want to spend a ton of time in the kitchen. Here are a few of the recipes that we use. My boyfriend can be a really big eater, so keep that in mind when reading these.
Italian Chicken (Not sure if this is what you make or not)
4 boneless skinless chicken breast
2 T. Honey
1 bottle Kraft Zesty Italian Salad Dressing
Put chicken in a 9 X 13 baking dish. Drizzle with honey then cover chicken with italian dressing. Cover and let marinate at least over night. Can be baked or put on a grill. Cover with foil and bake at 350
We had this the other night with some rice and spinach.
Celery Chicken
3 nice sized baking potatoes
4 boneless skinless chicken breast
2 cans Campbell's Cream of Celery soup
Scrub down the potatoes and then slice them about 1/4-1/2" thick. Put them in a 9 X 13 baking dish, put the chicken on top of the potatoes, top the whole thing with the soup. Cover with foil and bake at 350 until the potatoes are soft and the chicken is done.
This recipe kills 2 birds with one stone, protein and starch. Fix a veggie and you're done, easy enough.
Easy Shrimp Scampi Pasta
1 SeaPak Shrimp Scampi boxes
1/2 box fettuccine
Follow the directions on the box for the scampi. Prepare the noodles until al dente. Toss together.
He loves this with salad and garlic bread, and it all takes about 10 minutes to put together.
There's a package at my grocery store (Meijer) of 2 nice sized ham slices. I'll buy this, bake some sweet potatoes and make a veggie.
When pork tenderloin is on sale, I'll buy a whole one and then let the butcher cut it into 2 nice butterflied chops and 2 smaller roasts. So I can get 3 meals out of a $9.00 roast.
I then stuff the chops with some stovetop stuffing, season the pork, and bake until done. Again, all you need is a veggie to finish the meal. Then, I usually freeze one of the roasts for a later date and do the other one a couple days later. I'll make mashed potatoes and gravy from the drippings off the roast. Betty Crocker came out with a Yukon Gold instant mashed potatoes and they are quite good and it runs $1.00 a box.
I usually only buy and use boneless skinless chicken breast for all my chicken dishes. When it's on sale, I'll buy 2 packs, freeze one and then use the other one.
Easy Chicken Quesidillas
1 Rotisseri baked Chicken from the grocery store, plainish flavor
1 package of taco seasoning
1 limes
2 cups colby jack cheese, shredded
1 package of tortillas
This is a 2 for dinner too. I use the chicken one night as baked chicken and then have enough left over to make these quesidillas.
Pick the rest of the meat off the chicken. Add as much taco seasoning as you like, I tend to run a little lighter as he doesn't like things too spicy. Squeeze the juice of the lime and stir to combine. Spoon some chicken filling on the tortillas, bottom of tortillas sprayed with Pam. Top with cheese and any other fillings you like i.e. black olives, chopped cilantro, etc. Bake until the cheese is melted and the filling is hot. Serve with sour cream, salsa, guacamole, etc.
I don't have a recipe for Salsa Chicken, sorry about that. Hopefully I've given you some other ideas to add to your recipe box. Enjoy!
