How many different ways can you make chicken?
I make fried, both kinds, floured and breaded, chicken parmesan, chicken taquitos and tacos , chicken spaghetti, Italian chicken, teriyaki chicken, chicken stir fry, bbq chicken, breaded chicken sandwiches, carving board chicken sandwiches, chicken nuggets and strips , chicken soup, chicken casserole, baked chicken and foil packets…..
and I’m sick of them all….don’t get me wrong I do eat beef, pork and fish, but chicken is always cheaper at the store.
What do you do with chicken and do you have any recipes that you might think that I might like?
I want a good old fashioned recipe for chicken gumbo, old style. Grandma use to make it, but she passed on with her recipe.
I’m up for anything, list what you know and pass around some recipes if you don’t mind.
Oh, a good recipe for something like General Tao’s chicken or sesame chicken will be great !!

Citrus Chicken & Rice
4 skinless, boneless chicken breasts
1 3/4 cups Chicken Broth
1/2 cup orange juice
1 medium onion, chopped
1 cup uncooked regular long-grain white rice
1 tbsp. dried parsley flakes
Orange slices
COOK chicken in nonstick skillet over medium-high heat 10 min. or until browned. Set chicken aside. ADD broth, orange juice, onion and rice. Heat to a boil. Cover and cook over low heat 10 min. Return chicken to skillet. Replace cover. COOK 10 min. or until chicken is done. Stir in parsley and top with orange slices.

Mexican Chicken Casserole
5-6 skinless,boneless chicken breast
15 oz black beans, drained
2 cans corn, drained
1 c chunky salsa
1 c cheddar cheese
In crockpot, place chicken. In large bowl, combine beans, corn & salsa. Mix well. Pour over chicken. Cover & cook on high 3 hrs. Sprinkle cheese over mixture. Cover & cook 10 min.

Salsa Chicken
4 skinless, boneless chicken breast halves
4 tsp taco seasoning mix
1 cup salsa
1 c shredded Cheddar cheese Kraft 2% low fat
Light sour cream for garnish
Preheat oven to 375 . Place chicken breasts in 9 x 13-inch baking dish. Sprinkle taco seasoning on both sides of chicken. Pour the salsa all over the breasts. Bake about 25 - 30 minutes or until chicken is tender and juicy and juices run clear. Sprinkle the cheese on the breasts evenly and bake another 5 minutes or so until melted and bubbly. Serve with fat free sour cream as a garnish if desired.

Fiesta Chicken & Rice Bake
1 can (10 3/4 oz.) Cream of Chicken Soup
1 cup Picante Sauce
1/2 cup water
1 cup whole kernel corn
3/4 cup uncooked regular long-grain white rice
4 skinless, boneless chicken breasts
Paprika
1/2 cup shredded Cheddar cheese
MIX soup, salsa, water, corn and rice in 2-qt. shallow baking dish. Top with chicken and sprinkle with paprika. Cover. BAKE at 375°F. for 45 min. or until done. Sprinkle with cheese.

Verde Enchilada Casserole
1 can (10 3/4 oz.) Creamy Chicken Verde Soup
1/2 cup water
1/2 tsp. garlic powder
2 cups cubed cooked chicken
4 flour tortillas (8-inch), cut into strips
1/2 cup shredded Cheddar cheese
MIX soup, water, garlic powder and chicken. Stir in tortillas. SPREAD in 2-qt. shallow baking dish. Top with cheese. Cover. BAKE at 350ºF. 25 min. or until hot.
