Grandgirl’s Fresh (Caramel) Apple Cake by Paula Dean
Cake:
Butter, for greasing pan
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1/4 cup orange juice
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
3 cups peeled and finely chopped apples
1 cup shredded coconut
1 cup chopped pecans
Sauce:
1/2 cup (1 stick) butter
1 cup sugar
1/2 cup buttermilk
1/2 teaspoon baking soda
Preheat the oven to 325 degrees F. Generously grease a tube pan.
For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.
Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.
Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

would like an apple crisp recipe?
I would like an apple crisp recipe. One that you have tried and really enjoy!
This is by far the best, and believe me I've tried them all.
Apple Crisp
4 c. peeled, sliced apples
2 tbsp. flour
1/2 c. sugar
1 tsp. cinnamon
1/2 c. water
Place sliced apples in bottom of greased baking dish. Mix dry ingredients; sprinkle over apples. Pour water over apples.
3/4 c. rolled oats
3/4 c. flour
3/4 c. firmly packed brown sugar
2 tbsp. sugar
1/4 c. butter or margarine
Mix flour, oats and sugars. Cut in margarine with a fork until mixture is crumbly. Sprinkle crumbs over apples. Sprinkle a bit of cinnamon over top.
Bake at 350 degrees for 1 hour.

Beef & raspberry chipotle sauce recipe?
I like to grill, my friend likes raspberry chiplotle sauce on meat, steak marinaded with raspberry chipotle is weird, so I need a diff. recipe. (No ham allowed). brisket is actually pretty good but takes too long.
How about raspberry chipotle fajitas made with rib eye or sirloin? Maybe put in some really hot chili? Anybody have a BBQ recipe that would use raspberry chipotle?
Here's a recipe for raspberry chipotle sauch that you can use " as a barbecue sauce, glaze, or basting sauce for poultry, shrimp, and meats. Pour over a block of cream cheese and serve as a dip with club crackers. Use as a sauce for meatballs or cocktail sausages for a crowd-pleasing appetizer. Great in wraps." Raspberry Chipotle Sauce Recipe
Ingredients
1 tablespoon olive oil
1/2 cup small diced onion
2 teaspoons minced garlic
2 teaspoons chipotle chiles in adobo, chopped
2 pints fresh raspberries, rinsed
1/2 cup raspberry vinegar
3/4 cup granulated sugar
1/2 teaspoon salt
Instructions
In a medium saucepan, heat oil over medium-high heat. Add the onions and cook, stirring, until soft and slightly caramelized, 4 minutes. Add the garlic to the pan and saute for 1 minute. Add the chipotles and cook, stirring continuously, for 1 minute. Add the raspberries and cook until soft, 2 to 3 minutes. Add the vinegar and stir to deglaze the pan. Add the sugar and salt, and bring to a boil.
Reduce the heat to medium and simmer until thickened and reduced by half, 8 to 10 minutes. Remove from the heat and cool before using.
For a clear glaze, strain through a fine mesh strainer, pressing on the solids with the back of a spoon to extract as much liquid as possible.
Yield: about 1-1/2 cups

Ingredients
1/4 cup raspberry chipotle sauce
1 tablespoon McCormick's Montreal Brand steak seasoning (or any seasoning blend)
1 rack of baby-back pork ribs (of course in your friends case you would just modify this recipe and use beef ribs)

Directions
1Season both sides of ribs with seasoning blend, then coat both sides with raspberry chipotle sauce.
2Place on a foil-lined baking dish or roasting pan.
3Bake uncovered in a 350 degree oven for 1 1/2 hours.
4Glaze with additional raspberry chipotle sauce after they come out of the oven.

These chicken wings are easy to make, but very tender and flavorful. As an added bonus, you'll end up with some awesome leftover chicken stock to use later in soups, stews, or sauces. The chipotle chiles lend a unique flavor to the sauce, so do use them, even if you cut back on the amount. If you've never tried them, they are described as having a spicy raisin flavor.
INGREDIENTS:
5 pounds large chicken wings, separated at the joint (add the wing tips to the pot if you have them)
1-3/4 cups chicken broth (1 can or homemade)
1/2 cup chopped onion
1/2 cup chopped celery
4 large cloves garlic, cut in fourths
2 teaspoons dried rubbed sage
2 teaspoons dried thyme
1/2 bay leaf
Water
.
Sauce:
2 Tablespoons butter
1/2 sweet onion, minced
3 cloves minced garlic
2 teaspoons (canned) chipotle chiles in adobo, chopped (available in the ethnic sections of most markets), or to taste
1/4 cup balsamic vinegar
1/2 cup seedless raspberry jam or jelly
Kosher salt
PREPARATION:
Place chicken wings in a large stockpot along with chicken broth, onion, celery, garlic, sage, thyme, and bay leaf. Add water to just barely cover contents. Cover with a lid and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Stir and skim off any foam midway through cooking. Remove cover and let cool at least 10 minutes.
While chicken wings are cooking, make the sauce. Heat a heavy saucepan over medium-high heat. Add butter and sweet onion. Reduce heat to medium and saute until onions are soft and translucent. Add garlic and chipotle chiles. Stir-fry 2 minutes. Deglaze pan with the balsamic vinegar, scraping up any browned bits from the bottom into the sauce. Add raspberry jam and salt. Stir until smooth. Let cool until chicken wings are done.
Strain wings (discard wing tips, if any) and retain strained stock for other purposes. Toss chicken wings with raspberry chipotle sauce. (May refrigerate for one day at this point.)
Position baking rack in the highest position. Preheat oven to 450. Line a 15 x 10-inch baking pan with non-stick foil.
Arrange chicken wings fattest-side up on prepared baking pan. Sprinkle lightly with kosher salt. Bake 25 minutes (30 to 40 minutes if refrigerated) in preheated oven until lightly browned. Serve hot.
Yield: about 8 to 10 appetizer servings
Beef Rolls in Chipotle

Beef strips are rolled with corn, red pepper and Raspberry Chipotle Salsa for a tasty appetizer that everyone can enjoy.
Ingredients
2 1/3 cups Water
1 Tbsp. Butter
3/4 cup Rice
1/4 cup Robert Rothschild Farm Raspberry Chipotle Salsa
1/3 cup Corn
1/4 cup Roasted red pepper, sliced
12 oz. Beef filet mignons
Salt and pepper to taste
Vegetable or olive oil
Directions
Bring water and butter to a boil in a medium saucepan. Add rice and cook for 20-25 minutes until water is fully absorbed and rice is tender. Place cooked rice in a mixing bowl and add Raspberry Chipotle Salsa, corn and roasted red pepper.
Slice each beef filet into multiple 1/4 inch thick slices of beef. Then thin out slices to about 1/8 inch thick with mallet. Season slices with salt and pepper on both sides.
Spread a layer of rice mixture on each beef slice leaving about 1/2 inch from end uncovered. Roll beef slice to form jelly-roll shape and skewer with toothpick. Rub a little oil on outside of each roll.
Grill on each side on a hot grill for 1-2 minutes per side. Serve immediately. Yields 14-16 beef rolls.

Anyone have a recipe for a pork tenderloin?
I made a delicious dish with a pork tenderloin and I can no longer seem to find the recipe. I took a pork tenderloin and rubbed it with salt, oil, ginger and garlic - the problem is I can't remember how much of each. Then seared it on top of my oven and served it with a homemade cran apple chutney. Anyone familiar with this recipe? Know where I could find it again? Or have any suggestions on the amounts of salt, oil, ginger and garlic to rub it with?

Lemon-Garlic Pork Tenderloin
2 tablespoons canola or vegetable oil
1 1/2 teaspoons lemon juice
1 1/2 teaspoons grated lemon peel
3 garlic cloves, minced
1 1/2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 (3/4 pound) pork tenderloin
In a resealable plastic bag, combine the oil, lemon juice, peel, garlic, oregano, salt and pepper; add pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight.
Drain and discard marinade. Grill, covered, over medium coals for about 13-14 minutes on each side or until juices run clear and a meat thermometer reads 160 degrees F. Let stand for 5 minutes before slicing

Grilled Ginger-Peanut Pork Tenderloin
2 (16 ounce) pork tenderloins, trimmed of fat
3 tablespoons soy sauce
1 1/2 teaspoons sugar or sugar substitute
1 tablespoon sesame oil
1 tablespoon smooth natural peanut butter
1 clove garlic, minced
1 teaspoon curry powder
1 tablespoon minced fresh ginger
1/2 teaspoon salt
Place pork in a large resealable plastic bag. Mix together soy sauce, sugar, sesame oil, peanut butter, garlic, curry powder, ginger, and salt in a bowl until smooth. Pour marinade over tenderloins, press air out of bag, seal, and refrigerate overnight.
Preheat an outdoor grill for high heat.
Use a paper towel to pat any excess marinade from the pork; allow to sit at room temperature while the grill is heating. Lightly oil grill grate. Cook pork 3 minutes on each side (on all four sides) for a total of 12 to 15 minutes. The pork will be done when it is no longer pink inside and has reached an internal temperature of 145 degrees F (65 degrees C). Remove from the grill and cover meat loosely with a foil tent. Let rest 5 minutes before serving.

Does this sound like a good dog biscuit recipe?
The other day, I made oatmeal raisin cookies. After I took them out of the oven, I set them on the counter to cool.Subsequently, my dog jumped up on the counter and stole three cookie. This is weird only because I had put other things on the counter such as hamburger meat, cooked chicken legs, and cheese, and my dog didn't jump up to get those things. So I guess my dog has a sweet tooth. Does the following recipe sound like a good dog biscuit recipe?
2cups oatmeal
2cups whole wheat flour
1/2cup honey
1cup chopped apples
1 egg
1 tsp. baking soda
1cup peanut butter (as a substitution for butter)
This is the third time I've made revised to the recipe. Is the third time a charm? Is this healthy?
Wheat is a known allergen and irritant to dogs' systems. Even if you do not see immediate irritation from wheat, a build up over time can impact the functionality of your baby's insides. I find it best to avoid wheat, except in EXTREMELY small doses, if absolutely necessary.
How about grinding the oats in a food processor to make oat powder/flour? I do this to avoid the wheat, and I also grind up whole Innova treats in the food processor to make what I call "Treat Flour". I use it in my dog recipes and, of course, my dogs go bananas for it.
Speaking of bananas, I always throw in a bit of mashed banana whenever I include apple in a dog recipe. Apple can give them the runs, but bananas can bind them up, so they balance each other out and keep your pooch's poops regular.
Also be careful giving your dog honey, as it can be an allergen. Start with small doses, if your dog is not used to it yet, and watch their reactions over 2-3 days.
Other than these cautions, the recipe sounds like fun! You could always add some mashed cooked carrots to it, or even get crazy and add a can of tuna or chicken. If you include meat, be sure to refrigerate the treats for no more than 3 days, or freeze for long term use.

Anyone have a similiar "Dutch Apple Pie" recipe?
My grandmother made a pie she called "Dutch Apple". It used peeled halved apples and had only a bottom crust. I remember it having a very creamy filling between the apples. I can't find anything like it in her recipes or on-line. Ideas?
Dutch Apple Pie

"This pie is baked in a brown parchment paper. It is so delicious."
INGREDIENTS:
5 large Granny Smith apples - peeled, cored and sliced
1/2 cup white sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons lemon juice
1/2 cup white sugar
1/2 cup all-purpose flour
1/2 cup butter
1 recipe pastry for a 9 inch single crust pie
DIRECTIONS:
1. Preheat oven to 425 degrees F (220 degrees C).
2. Combine 1/2 cup sugar, 2 tablespoons flour, and cinnamon. Pour over apples in crust. Sprinkle lemon juice on top.
3. Cut 1/2 cup sugar, 1/2 cup flour, and 1/2 cup butter or margarine together, and top pie with the mixture.
4. Take two 15 inch pieces of parchment paper and enclose pie; fold edges up 3 times. Place on a baking sheet.
5. Bake in preheated oven for 1 hour. Remove from oven, split parchment open and cool pie on wire rack. DO NOT open parchment covering while baking! Serve warm, or at room temperature.

Tasty healthy food ideas?
so i'm not overweight, at all, but lately i've been feeling like shit because i'm eating so much junk food. After school i usually have two bowls of pasta, chocolate, maybe an apple etc. but i'm constantly eating.... I'm hoping that by changing my diet it will help my skin too. So if anyone has any good recipes/ ideas for healthy food that would be great. Preferably easy to prepare that i can bring to school for lunch or have as a snack when i get home. Thanks!

Fresh Veggie Bagel Sandwich
1 bagel, sliced in half
1 tablespoon coarse-grain brown mustard
1 leaf romaine lettuce
2 (1/4 inch thick) rings green bell pepper
4 slices cucumber
2 slices tomato
salt and freshly ground black
pepper to taste
2 slices red onion
1/2 cup alfalfa sprouts
Directions:
1. Spread mustard onto the cut sides of the bagel. Layer the lettuce, green pepper, cucumber, and tomato on one half. Season the tomato with salt and pepper. Top with onion and alfalfa sprouts, then cover with the other half of the bagel

Chicken and Vegetable Pasta Salad
1 cup seashell pasta
1 cup chopped, cooked chicken meat
3 green onions, chopped into 1 inch pieces
1 red bell pepper, chopped
1 cup sliced black olives
1 cucumber, peeled and chopped
2/3 cup Italian-style salad dressing
1/4 cup sunflower seeds (optional)
Directions:
1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
2. In a large bowl, combine the pasta, chicken, green onions, bell pepper, olives and cucumber.
3. Pour dressing over salad and toss to coat. Chill for 2 hours before serving; sprinkle with sunflower seeds if desired.

Easy Hummus
1 (15 ounce) can garbanzobeans, drained, liquid reserved
2 ounces fresh jalapeno pepper, sliced
1/2 teaspoon ground cumin
2 tablespoons lemon juice
3 cloves garlic, minced
Directions:
1. In a blender or food processor, combine garbanzo beans, jalapeno, cumin, lemon juice, garlic and 1 tablespoon of the reserved bean liquid. Blend until smooth.
2. Serve with raw veggies or pita chips.

Martha Stewart pie recipe; apple raspberry?
a few weeks ago, martha did a week of shows with pie bake-off winners and there was an apple raspberry pie; I can't find it on her website; anyone have it??
It was on her site, you just missed it. Here you go:
Apple-Raspberry Pie
Serves 8 to 10
2 3/4 pounds assorted baking apples (such as Rome or Cortland), peeled, cored, and cut into 1/2-inch-thick slices
6 ounces fresh or partially thawed frozen raspberries
3/4 cup granulated sugar
1/4 cup all-purpose flour, plus more for work surface
1 tablespoon fresh lemon juice
Pinch of salt
Pâte Brisée
2 tablespoons unsalted butter, cut into pieces
1 large egg yolk
1 tablespoon heavy cream
Fine sanding sugar, for sprinkling
1. Preheat oven to 375°. Stir apples, raspberries, granulated sugar, flour, lemon juice, and salt in a large bowl; set aside.
2. On a lightly floured surface, roll out 1 disk of dough to 1/8 inch thick. Cut into a 12-inch round. Fit into a 9-inch pie plate. Fill with apple mixture. Dot with butter.
3. On a lightly floured surface, roll out remaining disk of dough to 1/8 inch thick. Cut into a 12-inch round. Drape over filling. Trim overhang to 1 inch. Press edges to seal. Fold overhang under, and crimp as desired. Make five 3-inch slits in top crust. Refrigerate 20 minutes.
4. Whisk egg yolk and cream in a bowl; brush over top crust. Sprinkle with sanding sugar. Bake until crust is golden and juices are bubbling, 1 hour 10 minutes to 1 hour 20 minutes. Place foil on rack below to catch juices. Tent pie with foil if browning too quickly. Transfer to a wire rack; let cool 4 hours (up to overnight).
