Recipes Hearty Soups
Who has a good recipe for a hearty vegetable soup?
Added meat or chicken is acceptable. Thanks for sharing!
Hearty Vegetable Soup Ingredients:
1 leek, trimmed, halved lengthways and sliced
1 large onion, sliced
2 celery sticks, sliced
1 large zucchini, chopped
2 medium sweet potatoes, peeled and chopped
Salt and pepper to taste
4 yellow squash, chopped
1 large eggplant, peeled and chopped
1 1/2 tbsp tomato paste
6 cups vegetable stock
3/4 cup cooked red kidney beans
2 tbsp fresh parsley, finely chopped
Hearty Vegetable Soup Method:
Saute leek and onion in a large saucepan with 2 tablespoons of water until soft. Add celery, zucchini, squash and eggplant to the saucepan and cook for 5 minutes. Add tomato paste and cook for further minute. Add stock and sweet potato to the saucepan, bring to the boil, reduce heat and simmer 15 minutes. Add red kidney beans, parsley and seasoning. Simmer a further 10 minutes or until sweet potato is soft.
Serves: 4
OR
Hearty Vegetable Soup
3 tablespoons olive oil
3 large carrots, peeled, coarsely chopped
1/2 large head green cabbage, thinly sliced
1 onion, chopped
2 celery stalks, chopped
2 tablespoons chopped fresh rosemary or 1 tablespoon dried
6 cups vegetable or chicken broth
1 (28-ounce) can ready-cut tomatoes with juice
1/3 cup freshly grated Parmesan cheese
Additional freshly grated Parmesan cheese
Heat olive oil in Dutch oven over medium heat. Add carrots, cabbage, onion, celery and rosemary. Saute until tender and beginning to brown, about 10 minutes. Add broth and tomatoes with juice; simmer for 45 minutes. Season soup to taste with salt and pepper.
Stir in 1/3 cup Parmesan. Ladle soup into bowls. Serve, passing additional cheese separately.
Serves 8.

15 ounces red kidney beans canned
32 ounces tomatoes canned ,cut up
15 ounces great northern beans canned
15 ounces chickpeas (garbanzo beans)
1/2 cup water
3 each onions medium, chopped
2 each green bell peppers med. chopped
2 each celery stalks sliced
1 each zucchini halved length,sliced
2 cloves garlic peeled and minced
2 teaspoons basil crushed
1/4 teaspoon black pepper
1 each bay leaf
Directions
Combine the undrained tomatoes, undrained beans, water,
and remaining vegetables and seasonings in a 4-quart Dutch
oven.
Bring to boil.
Reduce the heat; cover and simmer for about 1 hour or until
vegetables are tender.

I got the ingredients for Sainsburys vegetarian chili recipe, come home to make it and the site won't....?
show the recipe again?! Can anyone else have any luck with it? I wouldn't normally bother following recipes but wanted to follow it properly today!
I bought;
Quorn mince
Onion
Green chilis
Red kidney beans
Veg stock cubes
Chopped toms
Tom puree
Green pepper
Well, I can guess:
Combine 1 veg stock cube with 1 cup hot water - set aside.
Saute chopped onion, and chopped green pepper and chopped green chilis in olive oil for a few minutes. Add the pack of Quorn and saute for a further few minutes.
Add the kidney beans, chopped tomatoes, tomato puree, veg stock, salt, pepper and chili powder to taste.
Bring to the boil while stirring regularly, cover and simmer for 20-30 minutes.

Recipes Ground Turkey Chili
My son is allergic. Any good recipes out there that can be a substitution for hamburger?
My son tested allergic to beef and pork, his favorites. Ground turkey and chicken just doesnt seem to be a good replacement in the recipes. Is there something I am doing wrong or is there a way to spice these up better to make them taste better? Any suggestions or recipes would be great. We are on a limited budget, so please keep that in mind. We already do eat alot of chicken, but I am looking for ways to make chili's, hot dishes, etc. as well. Thanks,
My family actually likes the ground turkey better in chili and spaghetti sauce - the meat really seems to absorb the flavor of the sauce better. Ground turkey can be difficult to make a meat loaf with - but it can be done. When I mix up my ground turkey for meatloaf I add 2 eggs instead of one and I add grated Parmesan cheese, a little bit of tomato sauce and oatmeal or breadcrumbs (but I think the real secret is the grated Parmesan cheese). With ground turkey you just have to work with it till you discover what works best for your adjusted recipe.
You can also buy ground lamb (but lamb has a very strong flavor - so it may not go over well with your son - but it is worth a try - maybe even mix ground turkey with the ground lamb and see how that works)
I will search around for some recipes and post them here in a bit for you.
Turkey burgers - (this recipe looks pretty basic for a plain hamburger patty - I have seen a lot of recipes for "doctored up" ground turkey burgers. You can find alot of these "doctored up" ground turkey burger recipes on the internet. What I think about the following recipe is that it is a good basic one - that will come up with a patty that will hold together)

"This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves."

INGREDIENTS:
* 3 pounds ground turkey
* 1/4 cup seasoned bread crumbs
* 1/4 cup finely diced onion
* 2 egg whites, lightly beaten
* 1/4 cup chopped fresh parsley
* 1 clove garlic, peeled and minced
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
DIRECTIONS:
1. In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
2. Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

Does anyone have a recipe for making vegan beans on toast?
I have heard this is a popular dish in Britain. I have no idea how to make it...like is it literally beans on a toast or do you use a special kind of bread? And what kind of beans? Baked beans, kidney beans? Do you cook the beans before you put it on the toast or do you cook the beans and bread in the oven to toast them?
Yeah, yeah, I know. Ignorant American. But I have heard several people mention this snack and I want to try it.
beans on toast, huh i heard about it a couple of years ago from a veteran from England.
All you do is toast bread (any kind that you like) and then put Hot baked beans or Hot pork and beans over it and serve. at first i thought it sounded horrible, but for real, it's actually very good. try it =)

Green Bean Mashed Potato Casserole?
I'm a veggie and I can't find a recipe for this w/o hamburger or meat in it. Any easy and simple recipes please reply.

This one has cheese in it. If you don't eat cheese, I guess u could remove it:
1 (10.75 oz) can Cream of Mushroom condensed soup
2 (14 oz) cans green beans, liquid removed
2 (15 oz) cans diced potatoes, liquid removed
1 pound Colby cheese, shredded
Preheat oven to 350 degrees F and lightly grease a small sized casserole dish.
Combine the soup, green beans, potatoes, and cheese in the dish.
Cover, and bake 30 minutes. Remove the cover, and bake an additional 15 minutes, until lightly browned and bubbly.
I feel hungry now!

Simple, Quick and Easy Tex Mex Recipes; Refried Bean Soup and Amish Style Taco Squares
Busy cooks we have some tasty and easy recipes for you. Whether you are a beginning cook, strapped for time, or just don't like spending lots of time in the kitchen, you can serve your family these recipes with little fuss. The Refried Bean Soup is a tasty and simple meal you can have on the table in 30 minutes. Add a salad or relish tray, crackers, or warmed tortillas, and you have a meal. The Amish-Style Taco Squares are a simple recipe using biscuit mix. They are easy to put together and will be on the table in less than an hour, including baking time. Again, add a salad or vegetable and you have a meal with little prep or clean-up time involved.
REFRIED BEAN SOUP
1 can (28-oz) crushed tomatoes
1/2 cup chopped onion
1/2 tsp minced garlic
1 can (31-oz) refried beans
1 can (14.5-oz)chicken broth
1 tbsp minced fresh cilantro
5 corn tortillas, cut into 1/2-inch strips, optional
Sour cream, optional
Shredded Monterey Jack cheese, optional
In a large saucepan, bring the tomatoes, onion and garlic to a boil. Reduce the heat and simmer, uncovered, for 5 minutes. Stir in the refried beans, broth, and cilantro. Simmer the mixture for 15 minutes. Meanwhile, place tortilla strips on a cookie sheet. Bake at 350 degrees for for 12 to 15 minutes until crisp. Dip soup into bowls and top with crisp tortilla strips. Add sour cream and cheese over the crisp strips, if desired.
AMISH STYLE TACO SQUARES
This recipe is from an Old Order Amish lady that lives in Indiana. Her family travels by horse and buggy and they do not use electricity. The state of Indiana is one of the states with several Amish communities that still practice old-fashion Amish ways. And they are always good cooks!
2 cups biscuit mix
1/2 cup cold water
1 lb hamburger
1 tbsp chopped onion
1 green pepper
1 cup pizza sauce
1 pkg taco seasoning
1 cup sour cream
1 cup cheddar cheese, shredded
1/3 cup salad dressing
Combine the biscuit mix and the water. Stir the mixture with a fork until blended. Press the mixture into the bottom of a 9 x 13-inch baking pan. Bake at 375 degrees for about 8 minutes. Brown the hamburger with the onion and chopped green bell pepper. Add the taco seasoning and pizza sauce. Spoon the hamburger mixture over the warm crust. Combine the sour cream, cheese, and salad dressing. Spread the sour cream mixture over the meat mixture. Bake uncovered for 25 minutes or until golden brown and bubbly at 375 degrees.

What can i make with the food i have?
So im really short on money and only have a limited amount of food for the next couple weeks. I don't have alot so im probably going to have to eat the same thing over and over. Unless i can get some nice recipes.
I have:
-A ton of pasta, mostly various sizes of shells
- rice
- 7 cans of mushroom soup
- 10 cans of cream corn
- 10 cans of green beans
- pancake mix
- some various jams, mustard and tomatoes
Thats all the food i have for 2 weeks. What interesting things can i make with that.

Goya Black Beans?
I just got some goya black beans in a can... they smell fine but they don't look like the picture on the can at all. the picture is of whole black beans but the beans in the can were basically mush, with some whole ones.
Anyone know what I should do? I need them for a recipe and i'm pretty bummed.
Use them, they are fine.
If they arent and you get sick it is not my fault, ut they never look right. Use your own judgement.
