1)One thing you might like is TACOS.

They are fun to make, easy and are so delicious too. My 17 year old makes them too.

*take some ground beef, about a pound--costs about $5.00 depending on where you live
saute it in a pan and stir it up so that it is all crumbled up. Drain the fat and take
*1 pack of taco seasoning and mix it in with about 1/4 cup water, (seasoning costs about $1.00)
*Put the meat into some hard shell taco shells, (about $2.00 for a 10 pack)
*put some shredded cheese and some cut up tomatoes and lettuce in the tacos. Maybe some hot sauce.

tastes really good and you can add or omit whatever you like.

2) Paula Dean's Chicken Nuggets (easy)

Directions

Vegetable oil, for frying
Ingredients

* 1 package dry ranch seasoning mix
* 1 cup bread crumbs
* 1/2 teaspoon salt
* 1 large egg, lightly beaten
* 1 cup all-purpose flour
* 3 boneless skinless chicken cutlets, cut into 1-inch cubes

Pour oil to a depth of 2-inches in a large frying pan or deep-fryer. Heat oil to very hot

In a small bowl, combine ranch mix, breadcrumbs and salt together. In a second bowl add the egg mixture and in a third bowl add the flour.

rub the chicken cubes in flour, dip in beaten egg, and then coat in breadcrumb mixture.

Fry chicken nuggets, in batches, for 5 to 6 minutes or until done. Serve with dipping sauce of choice.

3) Here's an easy recipe for SHEPARD'S PIE

Easy Shepherd's Pie Recipe

Ingredients

* 1 1/2 lbs ground round beef
* 1 onion chopped
* 1-2 cups vegetables - chopped carrots, corn, peas
* 1 1/2 - 2 lbs potatoes (3 big ones)
* 8 tablespoons butter (1 stick)
* 1/2 cup beef broth
* 1 teaspoon Worcestershire sauce
* Salt, pepper, other seasonings of choice

Method

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.

6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Here's what I serve my family but it's not really cooking per-se:

Get a pre-cooked rotisserie chicken at the supermarket. They are only about or under $5.00, (about the same as a raw one), and will serve you for two meals.

Then get some tater tots and a bag of salad mix and some salad dressing and maybe a frozen vegetable in a microwave bag. The corn and peas are good quality and you can microwave them in the bag they come in and only cost about $1.50.
