I'm out of icing/powder sugar and I'm making a cake with cream cheese frosting. No whipped cream recipes plz.

Icing sugar is an integral part of cream cheese frosting. Whenever I've tried to blend regular sugar down finely it has still been gritty in the icing. Try to send someone out to buy some. You really do not want to be disappointed by a substandard finished product.

Cake Flour?
Can someone help? I want to bake a Red Velvet cake, and the recipe I have is from an American cook book, and the flour I have to use is Cake Flour. I don't think we can purchase cake flour in Australia. So what flour do I use. The recipe also stated not to user Self Raising flour. Can anyone help???????

Can I substitute something for powdered egg whites?
I have a recipe for frosting that calls for:
1 pound confectioner's sugar
3 Tbsp powdered egg whites
7 Tbsp water
and I have no idea where to buy powdered egg whites. Can I substitute? If not, where can I buy some?
What I would do is take two whites and whip them till they begin to form stiff peaks, quarter the beaten egg whites and add a quarter at a time til you like how the frosting is looking and tasting (but make sure you mix the water and confectioner's sugar first til it makes a paste)
Once you start adding the quarters of egg white, the frosting will gradually become fluffier without destroying the "fluffiness" from the egg whites being whipped.
If you feel like you HAVE to get powdered egg whites, try phoning around at health food stores and see what they have.

Try These Delicious Apple Recipes: Indiana Apple Pudding and Baked Apple Doughnut Fritters
Apples are one of our favorite fruits and there seems to be no end to the ways we use. Here are some recipes for different apple treats. With apple season coming on, we will have lots of apples to use. Try this Indiana Apple Pudding which is wonderful served warm. This is a perfect fall or winter dessert. For a completely different apple treat, try these Baked Apple Doughnut Fritters.
INDIANA APPLE PUDDING
2 cups diced apples
1 cup sugar
1 egg, well beaten
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 cup chopped nuts
1 cup all-purpose flour
1/2 tsp salt
1 tsp vanilla
Preheat oven to 350 degrees.
Mix together the apples and sugar; add egg. Sift together the baking soda, cinnamon, salt and flour; add to apple mixture and mix well. Stir in the vanilla and nuts. Pour mixture into an 8 x 8-inch baking pan. Bake at 350 degrees for 25 minutes.
SAUCE:
SAUCE:
1/2 cup sugar
1/2 cup brown sugar
1/4 cup butter or margarine
2 tbsp flour
1 cup water
Cook sauce until thick and pour over pudding as soon as it comes out of the oven. Serve warm with whipped cream or ice cream.
BAKED APPLE DOUGHNUT FRITTERS
1 1/2 cup sifted flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup sugar
1/3 cup shortening
1 egg, beaten
1/4 cup milk
1/2 cup grated apples
1/2 cup oleo, melted
1/3 cup sugar
1 tsp cinnamon
Sift together the flour, baking powder, salt, nutmeg, and 1/2 cup sugar. Cut in shortening until mixture is fine. Mix together the egg, milk, and apple. Add mixture, all at once, to the dry ingredients and mix together quickly. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Mix together the 1/3 cup sugar and the cinnamon. Remove fritters from the pans immediately and roll in melted oleo then roll in the sugar cinnamon mixture. Delicious served warm.

Offshore Catering Jobs - Life As An Offshore Baker
Nothing beats the smell of freshly baked bread, and nowhere is this more apparent than on an offshore oil rig. The crew is starved and wiped out after a 12 hour shift working above stormy seas, and when they smell the bread just coming out of the oven - bread that you yourself baked - a smile will often form on their weary faces, and they will thank you by name, and tell you what a life saver you are.
This is the life of an offshore baker - making life enjoyable for others. You and the guys are working 12 hour shifts for a month at a time, and the little things mean a lot. Morale is important, especially in close quarters for extended stretches with people from all over the world, so you can be sure that the cooks and bakers on an offshore oil rig are held in very high esteem.
Most offshore baking jobs are on the night shift, but it also depends on the rig, as on the larger rigs, you'll have both day and night shifts for the bakers. But in all likelihood, you'll start on the night shift, and be there a while. Baking on an offshore oil rig isn't super fancy; your basic breads, rolls, pastries, cookies and snacks are standard. But if you want to whip up your own recipe for sourdough starter (and share some with the cooks for sourdough pancakes) you'll become an instant rock-star.
Too, if you want to bring in some old-world methods, and make rustic-style breads such as Bavarian Beer and Rye Bread, or a nice Whole-grain affair, or an Italian Peasant bread, no one is going to stop you. In fact, if you do so, you'll probably have a job for life for going the extra mile beyond your basic white and wheat.
Moving beyond breads, the offshore baker is also in charge of desserts. Now you can stick with your basic pies and pastries, and you will do fine. But don't take shortcuts in your ingredients; use real butter in your cookies and pastries, and your desserts will go from good to great. Like Julia Child once noted, it's really impossible to go wrong with butter. It's all about making the people happy, and nothing creates comfort like using ample amounts of real butter. If you go another extra mile and start making things like eclairs, donuts and cream puffs, you won't just be a rock-star; all your records will go Platinum.
Baking jobs offshore have their own unique set of challenges and rewards. But like anything else in life, it is what you make of it. Approach it with joy and an attitude of service, and you will find doors opening for you, not only on the oil rigs, but in life. Don't just be an offshore baker - be the best offshore baker your crew has ever met, and make them happy and delighted to be able to partake in your creations. You'll not only make the crew happy; you'll make them your friends.

Corned Beef And Cabbage Recipe
So why do we eat corned beef and cabbage on St. Patrick's Day?
St. Patrick's Day, (also known as St. Paddy's Day) falls on March 17 every year and is celebrated in the United States, New Zealand, Australia, Britain, and of course Ireland.
There are many traditions on St. Patrick's Day such as wearing green, shamrock symbols, going out drinking (for all you college students) and the main one that I like, making my corned beef and cabbage recipe.
But do you know why we eat corned beef and cabbage on St. Patrick's Day? Well after you read this article not only will you know why, but I'll show you a simple corned beef and cabbage recipe you can do, and if you are daring enough, you can visit my site link at the bottom to find out how you can get a great Irish Cookbook.
But first a little history lesson……..
St. Patrick was born Maewyn Succat during the 4th century in Britain to a wealth family. During his mid teens, his home was attacked by raiders whom kidnapped him and forced him to become a slave as a sheppard.
While in slavery he turned to God and eventually had a dream of escaping, which he did, and returned to his homeland. There he spent the next 15 years studying to become a priest and chose the name Patrick as his Christian Saint name.
So why does everyone take out their corn beef and cabbage recipe on St Patrick's Day?
Well, in the early century, beef was mostly eaten by the wealthy and on special occasions. The lower class had cows that they used to provide them with dairy products, both to sell and for the family. They were a very valuable animal to have. It wasn't until the cattle couldn't produce milk that they ate beef, (sad but true).
Pork at the time was much more affordable and since Ireland's climate is good for growing cabbage, they ate pork and cabbage. It wasn't until later, when the Irish migrated to America that they found corned beef to be more affordable than pork, hence, corned beef and cabbage. (A little side note, it's called corned beef because the beef is rubbed with salt the size of corn kettles, which helps to preserve the beef and keep it from going bad).
Today, you can buy corned beef for about 3.99lb, and .80 cent a lb. for cabbage, still affordable.
So here's the simple corned beef and cabbage recipe:
Boil your corned beef for about 1 hour per pound. Throw in your potatoes, carrots and cabbage leaves during the last half hour of cooking.

I had a recipe, I think it was flourless, that needed a springform pan. It was chocolate, it puffed up and once it cooled it caved in. You would then fill the crater with whipped topping. Any one know of this recipe, I would love to have it back.

Chocolate Cloud Cake
This flourless cake is crammed with chocolate (use only the best) and rich with butter and will fall slightly as it cools. The center is filled with softly whipped cream and sprinkled with cocoa powder — intensity, then relief, in each bite.
convert Ingredients
CAKE
8 ounces best-quality bittersweet or semisweet chocolate, coarsely chopped
1/2 cup (1 stick) unsalted butter, cut into pieces, softened
6 large eggs: 2 whole, 4 separated
1 cup sugar
2 tablespoons cognac or Grand Marnier (optional)
Grated zest of 1 orange (optional)
WHIPPED CREAM TOPPING
1 1/2 cups heavy cream, well chilled
3 tablespoons confectioners' sugar
1 teaspoon pure vanilla extract
Unsweetened cocoa powder, for sprinkling
Method
1. Preheat the oven to 350°F (175°C). Line the bottom of an 8-inch springform pan with a round of wax paper; do not butter the pan. Melt the chocolate in a bowl set over hot water. Remove from the heat and whisk in the butter until melted; set aside.
2. In a bowl, whisk the 2 whole eggs and the 4 egg yolks with 1/2 cup of the sugar just until blended. Whisk in the warm chocolate mixture. Whisk in the optional cognac or Grand Marnier and the optional orange zest.
3. In another bowl, with an electric mixer, beat the 4 egg whites until foamy. Gradually add the remaining 1/2 cup sugar and beat until the whites form soft mounds that hold their shape but are not quite stiff. Stir about 1/4 of the beaten egg whites into the chocolate mixture to lighten it; gently fold in the remaining whites. Pour the batter into the pan; smooth the top.
4. Bake until the top of the cake is puffed and cracked and the center is no longer wobbly, usually 35 to 40 minutes. Do not over bake.
5. Cool the cake in the pan on a wire rack; the cake will sink as it cools, forming a crater with high sides.
6. At serving time, whip the cream with the confectioners' sugar and vanilla until not quite stiff. With a spatula, carefully fill the crater of the cake with the whipped cream, pushing it gently to the edges. Dust the top lightly with cocoa powder. Run the tip of a knife around the edges of the cake; carefully remove the sides of the pan and serve.

Low fat or fat free white, yellow or pink birthday Cake Recipes? And icing ideas?
My daughter has requested a fat free white or pink birthday cake with white or pink icing. Mixes are fine by me too! The closest thing I am finding to what she wants is a jello cake recipe which doesn't sound too bad..its made with white cake mix, strawberry jello and cool whip...but wondering if anyone knows of anything else...she says she doesn't want chocolate...thanks
Pink Angel Summer Cake
1 pint strawberries, washed and hulled
1/2 pint fresh raspberries
2 tablespoons sugar
2 tablespoons orange juice, divided
1/4 cup strawberry jam
6 ounces angel food cake (half of 12 oz cake)
8 ounces vanilla yogurt or whipped topping
--Slice strawberries and set half of them aside with the raspberries. Place remaining strawberries in a mixing bowl with the sugar and 1 tablespoon orange juice. Mash with fork and let stand until they are juicy. Combine jam and remaining 1 tablespoon orange juice. Slice cake horizontally into 3 layers using a serrated knife. Spread jam onto bottom and middle layers and reassemble cake. When ready to serve, overlap 2 slices on each of 4 dessert plates. Stir reserved strawberries and raspberries into mashed berries. Top each cake slice with a spoonful of berries and a dollop of yogurt or whipped topping if desired. Serve immediately.

*This method calls for making three different colors. I think the cake would look very pretty if you were to just leave one white, make one light pink, and one darker pink.
Fat Free Pineapple Cake
4 egg whites or 1/2 cup egg substitute
2 cups sugar
2 cups flour
2 teaspoons baking soda
1 (20 ounce) can crushed pineapple, undrained
1 teaspoon vanilla extract
FROSTING
1 (8 ounce) package fat free cream cheese, softened
1 1/2 cups confectioners' sugar
1/4 teaspoon vanilla extract
--Preheat oven to 350°F Spray 13 x 9 x 2-inch baking pan with nonstick cooking spray.
CAKE: Beat egg whites and sugar until blended. In another bowl, combine flour and baking soda. Beat into wet ingredients. Add pineapple and vanilla extract. Pour batter into prepared pan. Bake for 40 minutes, or until it tests done when a toothpick inserted in the center comes out clean. Cool for 10 minutes.
FROSTING: Gradually whisk in confectioners’ sugar into cream cheese and vanilla. Frost cake with a knife, or by pouring it on if the frosting is thin.
