Bananas- How can I preserve a few dozen bananas?
Too good of a deal to pass up. I did some "bulk" shopping and bought about 3 doz bananas at one time. They were green three days ago and already ripe.
How can I prepare them so that I can use them in the future in cakes and breads?
You could mush them up (which you have to do for bread, cake and smoothies) and put them in ziplock bags. Measure them out in 1 or 2 cup bags, marking on the bag how much is in the bag. Then you can take out only what you'll need.

Substitutions-Kahlua in place of water for cake recipe?
I am making a chocolate bundt cake that calls for 1/2 cup of water. I'd like to substitute Kahlua for flavor, but I don't know if this will work or not. I would experiment and do it anyway, but don't have time for a flop. Thanks!
Replace half the water with Kahlua. You'll still get flavor, but less of a chance of messing up the recipe.
Or, make two cakes at the same time - one with kahlua instead of water and one normal - that way you're guaranteed at least one good cake XD

Icing sugar is an integral part of cream cheese frosting. Whenever I've tried to blend regular sugar down finely it has still been gritty in the icing. Try to send someone out to buy some. You really do not want to be disappointed by a substandard finished product.

Can I substitute something for powdered egg whites?
I have a recipe for frosting that calls for:
1 pound confectioner's sugar
3 Tbsp powdered egg whites
7 Tbsp water
and I have no idea where to buy powdered egg whites. Can I substitute? If not, where can I buy some?
What I would do is take two whites and whip them till they begin to form stiff peaks, quarter the beaten egg whites and add a quarter at a time til you like how the frosting is looking and tasting (but make sure you mix the water and confectioner's sugar first til it makes a paste)
Once you start adding the quarters of egg white, the frosting will gradually become fluffier without destroying the "fluffiness" from the egg whites being whipped.
If you feel like you HAVE to get powdered egg whites, try phoning around at health food stores and see what they have.

INDIANA APPLE PUDDING
2 cups diced apples
1 cup sugar
1 egg, well beaten
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 cup chopped nuts
1 cup all-purpose flour
1/2 tsp salt
1 tsp vanilla
Preheat oven to 350 degrees.
Mix together the apples and sugar; add egg. Sift together the baking soda, cinnamon, salt and flour; add to apple mixture and mix well. Stir in the vanilla and nuts. Pour mixture into an 8 x 8-inch baking pan. Bake at 350 degrees for 25 minutes.
SAUCE:
SAUCE:
1/2 cup sugar
1/2 cup brown sugar
1/4 cup butter or margarine
2 tbsp flour
1 cup water
Cook sauce until thick and pour over pudding as soon as it comes out of the oven. Serve warm with whipped cream or ice cream.
BAKED APPLE DOUGHNUT FRITTERS
1 1/2 cup sifted flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup sugar
1/3 cup shortening
1 egg, beaten
1/4 cup milk
1/2 cup grated apples
1/2 cup oleo, melted
1/3 cup sugar
1 tsp cinnamon
Sift together the flour, baking powder, salt, nutmeg, and 1/2 cup sugar. Cut in shortening until mixture is fine. Mix together the egg, milk, and apple. Add mixture, all at once, to the dry ingredients and mix together quickly. Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Mix together the 1/3 cup sugar and the cinnamon. Remove fritters from the pans immediately and roll in melted oleo then roll in the sugar cinnamon mixture. Delicious served warm.

Offshore Catering Jobs - Life As An Offshore Baker
Nothing beats the smell of freshly baked bread, and nowhere is this more apparent than on an offshore oil rig. The crew is starved and wiped out after a 12 hour shift working above stormy seas, and when they smell the bread just coming out of the oven - bread that you yourself baked - a smile will often form on their weary faces, and they will thank you by name, and tell you what a life saver you are.
This is the life of an offshore baker - making life enjoyable for others. You and the guys are working 12 hour shifts for a month at a time, and the little things mean a lot. Morale is important, especially in close quarters for extended stretches with people from all over the world, so you can be sure that the cooks and bakers on an offshore oil rig are held in very high esteem.
Most offshore baking jobs are on the night shift, but it also depends on the rig, as on the larger rigs, you'll have both day and night shifts for the bakers. But in all likelihood, you'll start on the night shift, and be there a while. Baking on an offshore oil rig isn't super fancy; your basic breads, rolls, pastries, cookies and snacks are standard. But if you want to whip up your own recipe for sourdough starter (and share some with the cooks for sourdough pancakes) you'll become an instant rock-star.
Too, if you want to bring in some old-world methods, and make rustic-style breads such as Bavarian Beer and Rye Bread, or a nice Whole-grain affair, or an Italian Peasant bread, no one is going to stop you. In fact, if you do so, you'll probably have a job for life for going the extra mile beyond your basic white and wheat.
Moving beyond breads, the offshore baker is also in charge of desserts. Now you can stick with your basic pies and pastries, and you will do fine. But don't take shortcuts in your ingredients; use real butter in your cookies and pastries, and your desserts will go from good to great. Like Julia Child once noted, it's really impossible to go wrong with butter. It's all about making the people happy, and nothing creates comfort like using ample amounts of real butter. If you go another extra mile and start making things like eclairs, donuts and cream puffs, you won't just be a rock-star; all your records will go Platinum.
Baking jobs offshore have their own unique set of challenges and rewards. But like anything else in life, it is what you make of it. Approach it with joy and an attitude of service, and you will find doors opening for you, not only on the oil rigs, but in life. Don't just be an offshore baker - be the best offshore baker your crew has ever met, and make them happy and delighted to be able to partake in your creations. You'll not only make the crew happy; you'll make them your friends.

Corned Beef And Cabbage Recipe
So why do we eat corned beef and cabbage on St. Patrick's Day?
St. Patrick's Day, (also known as St. Paddy's Day) falls on March 17 every year and is celebrated in the United States, New Zealand, Australia, Britain, and of course Ireland.
There are many traditions on St. Patrick's Day such as wearing green, shamrock symbols, going out drinking (for all you college students) and the main one that I like, making my corned beef and cabbage recipe.
But do you know why we eat corned beef and cabbage on St. Patrick's Day? Well after you read this article not only will you know why, but I'll show you a simple corned beef and cabbage recipe you can do, and if you are daring enough, you can visit my site link at the bottom to find out how you can get a great Irish Cookbook.
But first a little history lesson……..
St. Patrick was born Maewyn Succat during the 4th century in Britain to a wealth family. During his mid teens, his home was attacked by raiders whom kidnapped him and forced him to become a slave as a sheppard.
While in slavery he turned to God and eventually had a dream of escaping, which he did, and returned to his homeland. There he spent the next 15 years studying to become a priest and chose the name Patrick as his Christian Saint name.
So why does everyone take out their corn beef and cabbage recipe on St Patrick's Day?
Well, in the early century, beef was mostly eaten by the wealthy and on special occasions. The lower class had cows that they used to provide them with dairy products, both to sell and for the family. They were a very valuable animal to have. It wasn't until the cattle couldn't produce milk that they ate beef, (sad but true).
Pork at the time was much more affordable and since Ireland's climate is good for growing cabbage, they ate pork and cabbage. It wasn't until later, when the Irish migrated to America that they found corned beef to be more affordable than pork, hence, corned beef and cabbage. (A little side note, it's called corned beef because the beef is rubbed with salt the size of corn kettles, which helps to preserve the beef and keep it from going bad).
Today, you can buy corned beef for about 3.99lb, and .80 cent a lb. for cabbage, still affordable.
So here's the simple corned beef and cabbage recipe:
Boil your corned beef for about 1 hour per pound. Throw in your potatoes, carrots and cabbage leaves during the last half hour of cooking.
