Food allergies and sensitivities affect one-third of all Americans, and kosher foods’ clear labeling makes it easy for consumers to find dairy- and meat-free products. The U.S. Jewish population is shrinking while the Muslim population is growing, which ironically is rejuvenating the kosher market, because the dietary restrictions for Muslims are similar to those for Jews.

Halal food products—those complying with Islamic dietary rules—represent an $80 billion world market in 2007. For meat to be halal, an animal has to be slaughtered in a ritual way known as Zibah. Halal is like kosher in that it requires animals to be healthy at the time of slaughter, because carrion is forbidden. In addition, the animal’s jugular vein, carotid artery and windpipe have to be severed by a razor-sharp knife in a single swipe, so as to cause as little pain as possible. The difference is that a rabbi will read from the kashruth, and a Muslim will recite tanmiya.

Fried Mac and Cheese Balls Recipe

1 pound elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk, warmed, plus 2 tablespoons for egg wash
1 pound grated Cheddar
1 pound grated smoked Gouda
Salt and freshly ground black pepper
2 large eggs
3 cups seasoned bread crumbs
Vegetable oil, for frying
Marinara or Alfredo sauce, to serve

Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Drain again and set aside.
In a saucepan, melt the butter over medium heat. Sprinkle the flour into the butter and stir it with a whisk. Cook for 2 minutes. Whisk the warmed milk into the flour mixture, working out any lumps. Cook until the sauce thickens, about 2 minutes. Remove from the heat, add the cheeses, and stir until melted and smooth; season with salt and pepper. Fold the cheese sauce into macaroni. Pour the mac and cheese into a shallow pan and refrigerate until cold, at least 2 hours.

Shape the cold mac and cheese into meatball-sized balls and place them onto a waxed paper-lined tray. Freeze the balls overnight.

Beat the eggs and 2 tablespoons milk together to form an egg wash and pour it into a shallow bowl. Put the bread crumbs into another shallow bowl. Remove the mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the bread crumbs. Put the balls back into the freezer until you are ready to fry.

Heat the oil in a deep-fat fryer to 350 degrees F. Fry the mac and cheese balls until they are golden brown and center is hot, about 5 minutes. Serve hot with your favorite marinara or Alfredo sauce or combination or both for dipping.

me and my girl are wanting to make some mexican food soon and wanted some ideas. she loves jalopenos and i cant to bell peppers. we like enchiladas, quesadillas, tacos, that kind of stuff. any ideas?

Ingredients

* 1 1/2 cups chicken broth
* 1 cup uncooked long-grain rice
* 1/2 cup red enchilada sauce
* 1 1/2 onion, diced, divided
* 6 (12 inch) flour tortillas
* 4 cups diced cooked chicken breast, divided
* 1 pound Monterey Jack cheese, shredded, divided
* 1 (6 ounce) can sliced black olives
* 4 cups refried beans, divided
* 1/4 cup vegetable oil
* TOPPING
* 3 avocados, peeled and pitted
* 1/2 cup finely chopped cilantro
* 2 tablespoons lemon juice
* 3 green onions, diced
* 1/4 cup finely chopped jalapeno chile peppers
* 1 tomato, diced
* 2 cups shredded lettuce
* 1 cup sour cream
* 2 cups shredded Cheddar cheese

Directions

1. In a medium saucepan combine the broth, rice, sauce, and 1 diced onion. Mix and bring to a boil; reduce heat to low and let simmer for about 20 minutes, or until rice is tender.
2. Meanwhile, heat tortillas in a large skillet (so that they are soft enough to fold).
3. When rice mixture is ready, spoon equal amounts of the following onto each tortilla: Chicken, shredded Jack cheese, diced onion, olives, rice mixture and beans. Roll tortillas, tucking in sides to prevent filling from spilling over.
4. Heat oil in a large skillet and fry the filled tortillas, turning, until browned on all sides. Drain on paper towels.
5. To Serve: In a medium bowl combine the avocados, cilantro, lemon juice, green onions, chile peppers and tomatoes. Mash together. Place shredded lettuce on a platter, topped with chimichangas, avocado mix, sour cream and shredded Cheddar cheese.

Easy Chicken Burritos

Ingredients -

3 lbs shredded, cooked chicken
¼ cup sour cream
7 ½ oz can tomatoes with jalapeño peppers
1 teaspoon salt
1 tablespoon chili powder
¼ cup sour cream
1 diced tomato
1 cup sliced iceberg lettuce
2 cups shredded Monterey Jack cheese
16 oz can refried beans
8 flour tortillas, 8 inches diameter

Preparation:

Preheat the oven to 425 degrees F.

Combine the chicken, canned tomatoes with their liquid, chili powder, sour cream and salt in a bowl. Divide the refried beans between each tortilla, spreading them evenly over. Divide the chicken between each tortilla, placing it in the centers.

Sprinkle half the cheese over the chicken and roll up the burritos.

Place them seam side down in a 12 x 8 inch baking dish.

Cover with foil and bake for 30 minutes.

Remove the foil and sprinkle the remaining cheese over the top.

Bake for another 5 minutes, until the cheese begins to brown.

Sprinkle the lettuce and tomato over the top and serve.

When the water is about to boil add the vegetables. Next, add small amounts of salt and pepper to your liking. Last, serve with bread.

French Fries (las papas fritas). First, put 1/2 cup of oil into a frying pan and place over stove. Next, chop 3 potatoes into rectangular shaped pieces. When the oil is hot add the potatoes into the oil. Wait till the fries have a golden color to take out of the oil. Place the cooked fries onto a paper towel to drain excess oil. Last, serve french fries with ketchup

Looking for ideas for an appetizer called "Gougeres" they are french cheese puffs ?

I made these apps for Thanksgiving and they were very good but a little bland. I am looking for a nice dip or sauce to use with this recipe. Any ideas would be appreciated. Thanks in advance!

Cheese Puffs (Gougeres)
1 c. all-purpose flour
1/2 t salt
1/2 t black pepper
1/2 t thyme
Pinch cayenne pepper
1 c. whole milk
4 oz. unsalted butter, cut into 1/2" cubes
5 extra-large eggs, at room temperature
6 oz. Parmesan cheese, freshly grated
1/2 c. grated Gruyere cheese

Preheat oven to 425 degrees F. In a medium bowl, combine the flour with the salt, black pepper, thyme, and cayene. Set aside.

In a large saucepan, combine the milk and the butter. Bring to a boil over high heat. Remove the pan from the heat when the butter melts and add the seasoned flour all at once. With a wooden spoon, stir vigorously just until the dough masses into a ball and does not cling to the sides of the pan.

Transfer the dough to a large mixer bowl. On medium speed, beat in the eggs, one at a time. Stir after each addition until the egg is completely absorbed. Continue this process until 4 of the eggs have been used. The dough should be smooth and satiny. Add the Parmesan and Gruyere cheeses to the dough and beat in thoroughly.

Spoon 2 teaspoons of dough about 1" in diameter onto buttered baking sheets, setting the gougeres about 1-1/2" apart. Beat the remaining egg and, with a pastry brush, lightly brush the tops to glaze.

Bake for 10 minutes, rotating the baking sheets halfway through, until the gougeres reach a rich golden brown. Let cool slightly. Serve immediately.

Gougères ( cheese puff appetizers )

Preparation: 20 min
Cooking: 25 min

Ingredients (serves 6 people):

- 4 eggs + (1 yolk - optional)
- 2/3 cups grated white cheese
- 2/3 cups of sifted flour
- 6 tbsps of butter + 1 tbsp for the cooking sheet
- 1 pinch of nutmeg
- salt and pepper

Directions:

Preheat the oven to 400°F.

In a thick and deep pot, heat 1 cup water.
When boiling, add the butter cut in pieces + 1 teaspoon of salt.

Remove from the heat and add the flour all at once.

Mix quickly, and let it dry for one minute at low heat.

Let it cool a bit, than add the eggs one by one, mixing well between each egg.

Add the grated cheese, nutmeg, salt and pepper.

Put this paste on a buttered oven sheet in small separated portions (the size of a nut), using two teaspoons.

You can paint the puffs with an egg yolk, using a brush.

Cook for 25 minutes, but check at 20 min (cookijg time depends on your oven).

You can change this dish into a main entree dish, by stuffing the puffs with foie gras, or by making a goat cheese stuffing, mixed nut, and some chives.

Serve with a salad.

Where can I buy a key lime mix that is used in the Lime cheese ball recipe? A grocery store or only online?

One of the recipes I found calls it "Keylime Quick Mix." But I'm sure there are a variety of lime mixes that can be used to create this cheese ball. I have found a couple recipes online, but none specify where to buy the mixes.

It looks like the ingredient lists mostly sugar and lime juice/lime oil solids, I found a couple of places online that sell such mixes, see below. Here's an ingredient list:
Sugar, maltodextrin, lime juice solids (maltodextrin, lime juice, lime oil), artificial flavor, FD & C yellow 5 and blue 1, and not more than 2% Tricalcium Phosphate added to prevent caking.

I've gotten powdered lemon juice at the grocery (http://www.truelemon.com/index.html), they also have lime powder, but I'm sure it's not Key Lime. Key limes taste different than Persian limes. The Persian Lime or Tahiti Lime (botanical name, Citrus latifolia) is a relatively new fruit, having been developed in the early 20th century. This is the usual lime (oval, dark green and with a thick rind) you find in supermarkets.

On the other hand, the Key Lime, Mexican Lime or West Indian Lime, (botanical name, Citrus aurantifolia), is round and small (Ping Pong ball size and smaller), a lighter shade of green (often yellow) with a thin skin and a delicate aroma.
It can take up to 12 of the small key limes to make 1/2 cup of the juice, more than twice the number of Persian limes, but if you can find the key limes in your supermarket (ask the produce manager when to expect them!), it is well worth it.

I've found bottled Key Lime juice at my local WinCo, maybe you can find some. You could use regular limes or lime juice, but it would taste different. Maybe if you can find Jello or other brand 'no cook' key lime pie filling, you could use that instead. I've also seen key lime bar mixes in the grocery, but not very often, you might look for that.

Here's a recipe using juice instead of a mix:
2 (8-ounce) packages cream cheese, room temperature
2/3 cup plus 3 tablespoons sugar
3 tablespoons fresh Key lime juice or regular lime juice
1 tablespoon grated Key lime peel or regular lime peel
Mix juice, peel and sugar until sugar is dissolved. Blend softened cream cheese into juice mixture, form into a ball, wrap with plastic wrap and refrigerate. Roll in coconut or slivered almonds, or even graham cracker crumbs before serving, if you like. Hope this helps!

What can I substitute for Cream of Chicken and/or Cream of mushroom soup in a recipe?

The recipe I have makes a spicy cheesy sauce to mix with chicken and pour over pasta. It calls for velveeta cheese, rotel diced tomatoes, and one can each of Cream of Chicken and Cream of Mushroom soup. I don't have either soup. What could I use instead?

Actually, if you have corn starch and milk, that is the best thing anyway. Use 2 tablespoons of cornstarch and 2 cups of milk and it is better and cheaper than the bought stuff. It makes a better sauce anyway. It will get it's flavor from the other stuff you are cooking. You can use mushrooms garlic and herbs with it and so many different things with it. Always keep corn starch and milk on hand.
