Does anyone have a good recipe?

I want to make stuffed chicken with spinach and ricotta cheese for my in laws. They are coming to visit and the pressure is on. I want to make a great dish to wow them and my husband said they love spinach and chicken so I want to put the two together. I figured ricotta cheese could help break up the spinach taste a little since me and my husband are not really big on it. If anyone has any GOOD recipes it would help me A LOT!! Thanks!! :)

Spinach-Chicken Bake
12 servings
Prep: 25 minutes
Bake: 40 minutes

Ingredients
3/4 cup seasoned fine dry bread crumbs
1/4 cup grated Parmesan cheese
12 skinless, boneless chicken breast halves (about 3-3/4 pounds total)
1/2 cup sliced green onions
2 tablespoons margarine or butter
2 tablespoons all-purpose flour
1 cup milk
1 10-ounce package frozen chopped spinach, thawed and well drained
1 4-ounce package boiled ham slices, chopped

Directions
1. In a shallow dish combine bread crumbs and Parmesan cheese. Lightly coat chicken pieces with some of the crumb mixture. Arrange in a 3-quart rectangular baking dish. Reserve the remaining crumb mixture.

2. In a large saucepan cook green onions in hot margarine until tender. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Stir in spinach and ham.

3. Spoon spinach mixture over chicken; sprinkle with the remaining crumb mixture. Bake in a 350 degree F oven for 40 to 45 minutes or until chicken is no longer pink (170 degree F). Makes 12 servings.

My husband and I have a one year anniversary coming up. I'm not the BEST cook in the world, but I'm decent! As long as it isn't too complicated! I would LOVE any suggestions or ideas on what to make for our special night!

Pasta is easy and almost everyone likes it. I would look on foodtv.com for some recipes. They even have whole menu plans. You could do like a fettuccine alfredo with broccoli and chicken and you have it all in one dish and it so decadent and quite easy. Maybe a salad and desert and he will be putty. GL

I'm from San Antonio Texas, and I want to create a mushroom ragu sauce to put over chicken. The recipe calls for marsala wine. Where can I get this? Better yet, what's a good one?

Izzy, you should be able to find it at the larger liquor coops. There are two types, there is the sweet Marsala al Ouvo, used in deserts, or the normal one that you need. Both are imported.

Curry Chicken Soup
If you have some cooking oil of any kind, chop up a bit of your onion and saute' it until translucent. Add your curry chicken leftovers, the broccoli (if you do have it), noodles and chicken stock. Cook until the noodles are done. Taste, and adjust the seasoning with salt, pepper, and fish sauce. Top with chopped spring onions.

Indian food recipes, anyone? Perhaps chicken tikka masala?

Does anyone have any really good Indian recipes they want to share? My favorite is Chicken Tikka Masala. Also, how do they make their rice??? It's not as puffy and bland as regular rice.

And naan (by using a standard oven)... anyone have any good ones for this? My favorite naan is Alu. Thanks!!

Namkin Chawal (Plain Rice):
21/2 cups long grain rice
4 cups hot water
2 teaspoons ghee
2 1/2 teaspoons salt

Method:
Wash rice well and soak I hour in cold water. Drain in colander while bringing water, ghee and salt to the boil in a heavy saucepan with a well-fitting lid. Add rice, stir and bring quickly to the boil. Turn heat very low, cover tightly and cook, without lifting lid or stirring, for 20-25 minutes. Lift lid to allow steam to escape for about 5 minutes, then lightly fluff up rice with fork, taking care not to mash the grains, which will be firm, separate and perfectly cooked. Dish up using a slotted metal spoon rather than a wooden spoon, which will crush the grains. Serve with curries or other spiced dishes.

Rajasthani Pilau (festive spiced rice):
2 1/2 cups long grain rice
3 tablespoons ghee or oil
2 medium onions, finely sliced
2 sticks cinnamon
6 cardamom pods, bruised
6 whole cloves
10 whole black pepper
4 cups hot stock or water
Salt to taste
Method:
If the rice needs washing, wash well in several changes of cold water and leave to soak for 1 hour. Then drain in a colander for at least 30 minutes.
Heat ghee or oil in a large, heavy saucepan and fry the sliced onion with the cinnamon, cardamoms, black pepper and cloves until the onions are golden, stirring frequently so that they brown evenly. Add the rice and fry for about 3 minutes, then pour in the stock or water. Add the salt and stir well while bringing quickly to the boil. Turn heat very low, cover tightly and cook without lifting lid for 25 minutes. Uncover, allow steam to escape for a few minutes, remove whole spices.
Serve hot with curry.

Saffron Rice:
1/4 tsp saffron threads
3 Tbsp warm milk
1 Tbsp butter
1/2 cup raisins (or currants, or dried cranberries)
1/2 cup cashew pieces or sliced almonds (or pistachio pieces)
1-1/2 cup long-grained white rice
3 cup water
1 Tbsp sugar (or honey)

Directions:
***(Yes, saffron is expensive, but there's really no substitute. But it's used in small amounts, and it's much cheaper at Indian groceries).
Measure the saffron threads into a small bowl and crush them with the back of a spoon. Heat the milk (do not
boil) and add to the bowl, stirrinng to dissolve the saffron. Stir in the sugar, and let stand while preparing rice.

In a small pot or frying pan, melt the butter and saute the raisens and nuts over very low heat for 2 min. (I eliminate this step and just add these things halfway through cooking the rice.) Boil the water, add the rice and stir with a fork. Cover the pot and cook over low to medium heat for 12-15 min, until the rice has absorbed much of the water. Add the saffron, milk and sugar mixture and stir gently with a fork. Add
the butter, raisins, and nuts and stir again. Be careful while stirring not to break the individual grains or the rice will become mushy. Cover the pot and cook another 10 min. or so until the liquid has been absorbed and the rice is completely cooked. (If there is liquid left
when the rice is done, cook for a couple of min. with the lid off.) The color of the rice will be bright yellow, and the saffron will smell wonderful. Serve immediately, as it does not taste the same reheated.
(actually, it still tastes pretty fine reheated, so don't fret about
this).

Navarattan Curry:
1 large potato
4 cups (of your choice of veggies e.g. Broccoli, green peppers, carrots, cauliflower, green beans, etc.)
2 Tbsp butter
1 large onion
2 cloves garlic
2 tomatoes
2 Tbsp yogurt (plain)
1/2 cup heavy cream
4 oz green peas
1/4 cup raisins
12 blanched almonds

Dry Marsala Ingredients:
1/2 tsp ground cardamon
1/2 tsp. coriander powder
1/2 tsp ground ginger
1/2 tsp red chili powder
1/2 tsp turmeric

Directions:
Boil vegetables (except onions and peas). Drain and set aside. Melt butter and saute onions and garlic. Add tomatoes, yogurt, and the dry masala, and simmer for 5 minutes. Add vegetables and simmer for another 5 minutes, then add water. Cover and simmer for 10 minutes. Add cream and peas, stirring gently.
Before serving, top with raisins and almonds.

Naan:
4 cups all purpose flour
1 tsp baking powder
1/2 tsp baking powder
salt to taste
1 egg, beaten
6 Tbsp plain yogurt
3 Tbsp butter or ghee, melted
About 1 Cup milk
1 Tbsp poppy seeds

Direction:

Sift flour, baking powder, baking soda and salt together in a bowl. Stir in egg, yogurt and 2 tablespoons of the butter. Gradually stir in enough milk to make a soft dough. Cover with a damp cloth and place in a warm place for 2 hours.
Preheat oven to 400 degrees F (205 C) (Note: I use even higher temp 500F) Knead dough on a floured surface for 2 or 3 minutes until smooth. Divide into 8 pieces Roll each piece into a ball then into ovals about 6
inches long. If you must use a baking sheet, grease it and brush the underside of the bread with water. Brush the other side with butter and sprinkle with poppy seeds
Bake 6 to 10 minutes until puffy and golden brown.

Chicken Bhuna:
4 fl.oz. Vegetable Oil
2 tsp Garlic Paste
2 tsp Ginger Paste
7oz Natural Yoghurt
1 tsp Cumin Seeds
1 tsp Coriander Seeds
1/4 tsp Turmeric
1 tsp Salt
1 tsp Chilli Powder
1 1/2lb Boneless Chicken Breasts, cut into 1 inch pieces
1 Large Onion
5 Tomatoes, chopped
Freshly chopped Coriander to garnish

Instructions
1. Heat the oil in a large pan, add the garlic and ginger pastes and cook for 1 minute.
2. Reduce the heat and gradually stir in the yogurt then add the cumin seeds, coriander seeds, turmeric, red chili powder and salt stirring constantly.
3. Add the chicken and simmer over a very low heat until all the yogurt has been absorbed.
4. Meanwhile, cut the onions into 1inch pieces then add to the pan and cook for 3-4 minutes.
5. Add the tomatoes, mix well and cook for a further 5 minutes.
6. To serve - transfer to a heated serving dish and garnish with chopped coriander.

Chicken Tikka Marasala:
Part A:
2 lbs. boneless chicken breast
1/4 cup yogurt
3 tsp minced ginger
3 tsp crushed garlic
1/4 tsp white pepper
1/4 tsp cumin powder
1/4 tsp mace
1/4 tsp nutmeg
1/4 tsp green cardamom powder
1/4 tsp chili powder
1/4 tsp turmeric
3 tbsp lemon juice
4 tbsp vegetable oil
Melted margarine (for basting)

Part B:
5 oz. tomato paste
10 oz. tomato puree
2 lbs. tomatoes, chopped
2 tsp ginger paste
2 tsp garlic paste
2 tsp green chilies
1 tbsp red chili powder
2 tsp cloves
8 green cardamoms
Salt To Taste
3 tbsp butter
2/3 cup cream
1 tsp fenugreek
2 tsp ginger, julienned
honey to taste

Preparation:
Whisk all of the ingredients in Part A together in a large bowl. Add the chicken breast, cut into 2 inch cubes.
Marinate overnight in the refrigerator. Preheat oven to 350º F. Bake the chicken for 8 minutes, basting with margarine twice. Drain excess marinade and bake for another 2 minutes.
While doing this, make the sauce in Part B. Deseed and chop green chilies. Put tomatoes, tomato paste and tomato puree in a pot and add approximately 4-1/4 cups of water.
Add ginger and garlic paste, green chilies, red chili powder, cloves, cardamoms, and salt. Cook over low heat until reduced to a thick sauce. Strain through a strainer and bring to a boil. Add butter and cream. Stir.
If the sauce tastes sour, add honey to taste. Add fenugreek and ginger juliennes, stir, and serve with the chicken tikka masala

PLease can someone give some tips for healthy meals that are low fat and would fill me up till the next one.

Any recipes/links theres so may sites I cant find any particularly good one. That are easy and quick to make. I work in an office and find it hard to eat enough and get soo hungry whilst working my tummy's always rumbling! x

Breakfasts: Poached egg, soft yolk on whole grain toast, fruit
Fiber One Cereal with skim milk (has 1/2 daily fiber
requirement with berries;
Low fat Yogurt, fruit (eat fruits instead of juices...much less sugars;

AM & PM snacks: Low fat Yogurt, palmful of nuts: Walnuts, pecans, almonds, macadamia nuts, pistashios. Fruit salad grapefruit, cantaloupe, red grapes, kiwi, mango, papaya, pineapple, apple; salad greens; broccoli, brussel sprouts, asparagus, celery, Protein bars (check ingredients), etc.

Lunch & Dinner: Lean protein: Turkey breasts, skinless chicken; salmon with honey/mustard/lemon marinade 5 minutes in microwave in glass baking pan with a little water on bottom; or in oven till flaky about 10. minutes
tuna, chicken, egg salad on greens or sandwich;
Fish: Mackeral, anchovies, salmon, sardines, salmon(all high in Omega 3 oils); Tofu; Soy cheddar cheese, 1%cottage cheese with greens, tomatoes,etc.; farmer cheese,
turkey burgers with ketchup lettuce & tomatoes; tilapia, sole, Chilean sea bass, tuna steak with wasabi & lite soy sauce,
Home made vegetable soup; Burritoville: burrito with soy cheese & whole wheat taco;
Fluids: Water, fresh brewed iced tea, hot tea with lemon/honey, a little decaf coffee.

My friends have just had their second baby. I would like to take them some food that they can freeze now and eat later. Does anyone have a good casserole recipe (or something else) that freezes well? Thanks.

It's limitless! What do they like to eat? You can freeze it. What do you feel like cooking that they will eat? Freeze it.

Start with a salad, the frozen meal, and some cookies or cake, or even ice cream for dessert - or fresh fruit if they're healthy folk.

You can even skip freezing something and bring them a nice big chef type salad - greens, tomatoes, cukes, onion if they like it, shredded cabbage, radish, olives if they like it, cheese(s), and then you can slice/sliver some lunch meat and cheese on top, and bring along a bottle of salad dressing or make some for them. How many people are going to take the time after having a new baby to do something like that? Everyone thinks of meals that can be frozen - and they only think of dinner. How about breakfast and lunch? Stratas, frittatas, a nice sandwich plate with chips and pickles.

Looking for Iraqi Dolma Recipe. Anyone can help?

I am looking for a specific recipe that is the best dolma I ever had! I cannot find it anywhere...

Various vegetables are stuffed in the same dish: vine leaves, aubergine, potato, onions, bell peppers etc

The filling/stuffing includes (among other ingredients): minced meat, basmati rice, tomato, cinnamon or all spice, cloves and most important an Iraqi spice called 'limoon aswad' or dry black lemon in English. Some also add roman/pomegranate/grenadine.

At the end, all the vegetables are covered with a lemony Tomato sauce and cooked in a pot or pressure cooker...

Anyone has the full recipe?

first of all its not necessarily an iraqi dish :)
its mainly a turkish dish
this is all i can tell you

You need to mix the mince with your flavourings, add rice, it all stays raw for now. open vine leaves or whatever your going to use, then roll it up (vine Leaves) or put it in aubergine ect- after that you lay them in a pot neatly-
Then in another pot or bowl- mix boiling water with tomatoe puree, add some flavourings and lemon, make sure its not too runny or too thick- add it into the pot, make sure its enough to cover all of the dolma's and then put it to boil, it must boil for an hour or an hour and a half- it depends- you have to check it now and then- sorry for lack of information but hope it helped (they are really delicous :D )

Can you give these dishes a twist?

Hello! I need a new twist to my son's favortie dishes.
Here's a list of them. You can give me any recipes for any other dish too. I spacifically wanted these dishes with a twist, AND perhapes other dishes.( my kids like a lot of Italian)

Pasta
Spaghetti
Shrimp Spaghetti- which is spaghetti with out the sauce and shrimp instead of meat
Macaroni and Cheese
Pizza
Chicken Sticks
Fish Sticks
Fish on your plate- which is a medium sizes fish ( with seasoning and things) everyone gets a fish.
Tacos
Salad< Tyler LOVES Salad and he's only two!
Rice
Beans
Stir-fry< They both love this, but its hard to make. Any tips on making it easier?
Cheese burgers
Hotdogs
Chili
and many other things. Oh and Nick wanted me to tell you cookies too!! =) =)

A local grocery had a frozen shrimp or chicken stir fry-- I buy that, a 89 cent bag of mixed frozen veggies-- start rice in the micro-- I use 2 cups dry with 4 cups water/tad of oil and some salt-- my micro is 1000 watt-- so I put it on hi for 5 minutes-- then 70 % for 20 minutes in a micro rice cooker--
whip out the old wok-- drizzle a bit of corn oil in the pan-- follow the directions for the stir fry-- adding extra veggies when you are supposed to add the package veggis--After the wok food is nearly done, I mix up chicken broth with soy sauce and a couple tablespoons of corn starch-- makes a "gravy"--stir the pot-- both wok and rice are finished at about the same time--
fed two teens, one growing 3d grader and one old fat oma-- with seconds and sometimes left overs......

Looking for proper cooking techniques?

I bought some boneless, skinless chicken breast and I want to bake or broil it. I plan on seasoning it with dry spices before cooking. The problem is I can't cook very well and I want to know a ballpark figure (x minutes per pound) for different meats and fish. I asked my family and they said "You just know when it's done" and "Cut into it and see if it's done in the middle". Doesn't cutting into the meat make it dry out? Is there a website that teaches cooking times and techniques, not just recipes like Food Network? Thanks for your help.

I find broil or fry them in the skillet to be the best bet. You can tell doneness a bit by the outside--if its a bit brown on the outside it's most likely done on the inside, however it also depends on how high your flame under the pan is. If its very low your breasts won't cook that fast, if it's too high they'll burn. Most cooking is done on a medium flame. You must watch your food to a certain degree to keep it from burning.
