Christmas goodies - any recipes?
Every year for Christmas, my family recieves a plate FULL of unique little candies, cookies, chocolate covered pretzels, and the like from a family friend of ours...
This year, I wanted to do the same for my co-workers.
What kind of easy little treats can I whip up to put in my tins? I was thinking of making an assortment of 4-5 little things.
Here's a few ideas-- I don't have the recipes on hand, but i'm sure you can find them online- or you might even have some at home!
Thumbprint cookies with red and green frosting in the middle, rice krispie treats drizzled with red and green frosting or red and green sprinkles, chocolate covered pretzels (either white chocolate or milk- both would be pretty!) drizzled with red and green frosting or sprinkled with red and green sprinkles, decorated sugar cookies, gingerbread men-- just use your imagination and have fun!! Hope this helps a little!!

Substitutions-Kahlua in place of water for cake recipe?
I am making a chocolate bundt cake that calls for 1/2 cup of water. I'd like to substitute Kahlua for flavor, but I don't know if this will work or not. I would experiment and do it anyway, but don't have time for a flop. Thanks!
Replace half the water with Kahlua. You'll still get flavor, but less of a chance of messing up the recipe.
Or, make two cakes at the same time - one with kahlua instead of water and one normal - that way you're guaranteed at least one good cake XD

Bavarian Mint Truffles
GANACHE:
8 ounces dark sweet chocolate
3/4 cup heavy cream
1 1/2 tablespoons creme de menthe
DIPPING:
16 ounces dark sweet chocolate
1/4 cup vegetable oil
When chocolate and cream ganache have cooled to room temperature, stir in Creme de Menthe before refrigerating. Sprinkle dipped truffles with green sprinkles.

This is the time of year where diets are tossed out the door, and wonderful desserts take their place in the forefront of our minds and imaginations.
The holiday season is a wonderful time to spend with family and friends. Whether shopping the day away or relaxing by a fire with a loved one sipping on a cup of cocoa with or without marshmallows, you will find this is the season when sweeter is better.
Of course, exploring some of the delicacies of the holiday season can be just about as sweet as actually partaking of them. Take a look at a few Christmas foods that are traditional parts of many households and generations of families.
Fudge says it all!
What is more traditional when it comes to Christmas foods than wonderful chocolaty fudge? This creamy delicacy is sweet and creamy. Whether you like yours with or without nuts, you will find fudge is always a crowd pleaser. Wrapped fudge makes an awesome gift as well as a great addition to the holiday table.
Nowadays, fudge comes in other varieties rather than just chocolate. For instance, peanut butter fudge is more popular than ever. There are even other types of fudge you can make by using your imagination and a good cookbook.
Divinity is divine!
Divinity is a light and delicious candy difficult to make but scrumptious to eat. Divinity is generally one of those candies isolated to the holiday season. However, divinity is delicious anytime of the year. You will appreciate the wondrous world of divinity each holiday season, and the lightness of this candy makes it a favorite Christmas food every year.
Sugar cookies are children friendly!
One of my favorite holiday traditions is making sugar cookies. Add frosting and some sprinkles, and you have a delicious treat good for any day. In addition, children will love to munch on these, but they will have even more fun making them. The dough is easy to handle, add some cookie cutters, and you have a wonderful day of family fun perfect for children of every age.
Ginger bread for houses and more!
Nothing is quite as traditional as a ginger bread house. Each delicate piece is a wonderful addition to more than just taste. Ginger bread makes the whole house smell wonderful! Yum-yum Cherry Chewbilees That are Diabetic Friendly
This recipe for Yum-Yum Cherry Chewbilees is a real hit for so many reasons. It is a beautiful dessert to serve for almost any occasion with its' bright red color. For everything from family meals to Valentine's Day, to Christmas, this dessert will get you rave reviews from family, friends, co-workers, etc. And it is easy to prepare, making it easy for you to be a star! But the best part for many of us, is that it is diabetic friendly! No need to make two desserts, one for the "regulars" and one for the "diabetics".
YUM-YUM CHERRY CHEWBILEES
Crust:
1 cup walnut pieces, divided
1 1/4 cups all-purpose flour
1/4 cup Splenda Brown Sugar Blend
1/2 cup butter-flavored shortening
1/2 cup unsweetened flaked coconut
Filling:
2 pkgs (8-oz ea) cream cheese, softened
2/3 cup Splenda
2 eggs
2 tsp vanilla extract
1 can (21 oz) no-sugar-added cherry pie filling
Preheat oven to 350 degrees. Grease a 13x9x2-inch pan; set aside.
Chop 1/2 cup of the nuts coarsely for garnish; set aside. Finely chop the remaining one-half cup of nuts. Combine the flour and Splenda Brown Sugar Blend. Cut shortening into mixture until fine crumbs form. Add the finely chopped nuts and the coconut. Mix well. Remove 1/2 cup of mixture and set it aside. Press remaining crumb mixture into the bottom of prepared pan. Bake at 350 degrees for 12 to 15 minutes or until the edges are lightly browned.
To make the filling, beat cream cheese, Splenda, eggs and vanilla extract in a small mixing bowl at medium speed of electric mixer until smooth. Spread mixture over the hot baked crust. Return to the oven and bake for another 15 minutes. Remove from oven. Spread the cherry pie filling over the filling layer. Combine the coarsely chopped nuts and the reserved crumb mixture together. Sprinkle evenly over the cherry pie filling. Return to the oven and bake another 15 minutes. Remove from oven and allow to cool. Refrigerate for several hours to chill thoroughly. Cut into 36 bars.

Offshore Catering Jobs - Life As An Offshore Baker
Nothing beats the smell of freshly baked bread, and nowhere is this more apparent than on an offshore oil rig. The crew is starved and wiped out after a 12 hour shift working above stormy seas, and when they smell the bread just coming out of the oven - bread that you yourself baked - a smile will often form on their weary faces, and they will thank you by name, and tell you what a life saver you are.
This is the life of an offshore baker - making life enjoyable for others. You and the guys are working 12 hour shifts for a month at a time, and the little things mean a lot. Morale is important, especially in close quarters for extended stretches with people from all over the world, so you can be sure that the cooks and bakers on an offshore oil rig are held in very high esteem.
Most offshore baking jobs are on the night shift, but it also depends on the rig, as on the larger rigs, you'll have both day and night shifts for the bakers. But in all likelihood, you'll start on the night shift, and be there a while. Baking on an offshore oil rig isn't super fancy; your basic breads, rolls, pastries, cookies and snacks are standard. But if you want to whip up your own recipe for sourdough starter (and share some with the cooks for sourdough pancakes) you'll become an instant rock-star.
Too, if you want to bring in some old-world methods, and make rustic-style breads such as Bavarian Beer and Rye Bread, or a nice Whole-grain affair, or an Italian Peasant bread, no one is going to stop you. In fact, if you do so, you'll probably have a job for life for going the extra mile beyond your basic white and wheat.
Moving beyond breads, the offshore baker is also in charge of desserts. Now you can stick with your basic pies and pastries, and you will do fine. But don't take shortcuts in your ingredients; use real butter in your cookies and pastries, and your desserts will go from good to great. Like Julia Child once noted, it's really impossible to go wrong with butter. It's all about making the people happy, and nothing creates comfort like using ample amounts of real butter. If you go another extra mile and start making things like eclairs, donuts and cream puffs, you won't just be a rock-star; all your records will go Platinum.
Baking jobs offshore have their own unique set of challenges and rewards. But like anything else in life, it is what you make of it. Approach it with joy and an attitude of service, and you will find doors opening for you, not only on the oil rigs, but in life. I had a recipe, I think it was flourless, that needed a springform pan. It was chocolate, it puffed up and once it cooled it caved in. You would then fill the crater with whipped topping. Any one know of this recipe, I would love to have it back.

Chocolate Cloud Cake
This flourless cake is crammed with chocolate (use only the best) and rich with butter and will fall slightly as it cools. The center is filled with softly whipped cream and sprinkled with cocoa powder — intensity, then relief, in each bite.
convert Ingredients
CAKE
8 ounces best-quality bittersweet or semisweet chocolate, coarsely chopped
1/2 cup (1 stick) unsalted butter, cut into pieces, softened
6 large eggs: 2 whole, 4 separated
1 cup sugar
2 tablespoons cognac or Grand Marnier (optional)
Grated zest of 1 orange (optional)
WHIPPED CREAM TOPPING
1 1/2 cups heavy cream, well chilled
3 tablespoons confectioners' sugar
1 teaspoon pure vanilla extract
Unsweetened cocoa powder, for sprinkling
Method
1. Preheat the oven to 350°F (175°C). Line the bottom of an 8-inch springform pan with a round of wax paper; do not butter the pan. Melt the chocolate in a bowl set over hot water. Remove from the heat and whisk in the butter until melted; set aside.
2. In a bowl, whisk the 2 whole eggs and the 4 egg yolks with 1/2 cup of the sugar just until blended. Whisk in the warm chocolate mixture. Whisk in the optional cognac or Grand Marnier and the optional orange zest.
3. In another bowl, with an electric mixer, beat the 4 egg whites until foamy. Gradually add the remaining 1/2 cup sugar and beat until the whites form soft mounds that hold their shape but are not quite stiff. Stir about 1/4 of the beaten egg whites into the chocolate mixture to lighten it; gently fold in the remaining whites. Pour the batter into the pan; smooth the top.
4. Bake until the top of the cake is puffed and cracked and the center is no longer wobbly, usually 35 to 40 minutes. Do not over bake.
5. Cool the cake in the pan on a wire rack; the cake will sink as it cools, forming a crater with high sides.
6. At serving time, whip the cream with the confectioners' sugar and vanilla until not quite stiff. With a spatula, carefully fill the crater of the cake with the whipped cream, pushing it gently to the edges. Dust the top lightly with cocoa powder. Run the tip of a knife around the edges of the cake; carefully remove the sides of the pan and serve.

chocolate and peanut butter lovers!!! does this appeal 2 u??
ok, i just thought of this recipe for reese's popsicles (like reese's candies, which i LOVE)
ok, get milk chocolate, creamy peanut butter and popsicle molds. line the molds with melted chocolate (2 form a chocolate shell for the popsicle). allow to dry on the counter. then, in a bowl, poor some melted peanut butter (melted so it is smoother and easier to work with) and melted chocolate. stir it enough so that they are mixed in swirls but, don't make the chocolate and peanut butter mix 2gether. then, poor them into the chocolate-lined popsicle molds and freeze.
what do u think? is it 2 much peanut butter and chocolate? do u think the molds should b lined w/chocolate, then the chocolate lined with peanut butter, then the inside b chocolate/vanilla ice cream??? please! the person who helps me the most and contributes useful ideas gets 10pts!!!

that sounds SOOOO good!!!
have you thought about using peanut butter and chocolate ice cream instead-this might help the popsicles hold form a little better and will also make it easier to eat (frozen chocolate is really hard to bite).
you could also try using melted chocolate and peanut butter ice cream too.
i'm going to try this myself!!!
