Why does PBS cook with fat, butter, and sugar?
Has PBS failed in its responsibility to the public? Over 90% of the cooking shows I see on TV show refined sugar, butter, and excessive olive oil in its recipes. They seem to say that olive oil is healthy. It's not. It's easy to cook healthy and tasty equivalents.
Can we apply pressure to show cooking that does not lead to:
Obesity
High Blood Pressure
Heart Disease
Some Cancers, and
Diabetes?
What's your take. Should PBS be forced to show cooking methods that are safe for most Americans? NOTE: Populations that eat primarily low-fat vegetarian diets have extremely low rates of the diseases I listed.

Low Carb Low Fat Recipe

Low Fat/Low Calorie/Low Carb Meals That I Can Cook Then Freeze In An Air Tight Container For The Week?
I need some low fat/low carb/low calorie recipes that I can make a lot of, then freeze in an air tight container and then reheat when I want to eat it?
5 cups chicken broth or stock
3 tablespoons butter
1/3 cup finely chopped onion
1 1/2 cups Arborio Rice
1/2 cup dry white wine
1/2 teaspoon chopped saffron strands (dissolved in 1/2 cup hot broth from above)
1 tablespoon butter
1/3 cup freshly grated parmesan cheese
Salt and freshly ground pepper to taste
Parmesan Cheese
In a medium saucepan over medium-high heat, bring chicken broth to a slow, steady simmer.
In a large heavy 4-quart pan over medium heat, melt the butter; add onion and sauté for 1 to 2 minutes or until soft (be careful not to brown the onions).
Add the rice. Using a wooden spoon, stir for 1 minute, making sure all the grains are well coated (toasting the rice in melted butter keeps it from getting mushy). Add the wine and stir until completely absorbed. Add the hot chicken broth (1/2 cup at a time), stirring frequently. Wait until each addition is almost completely absorbed before adding the next 1/2 cup, reserving about 1/4 cup to add at the end. Stir frequently to prevent sticking.
NOTE: Risotto doesn't need constant attention during its 18 minute cooking time. You'll just need to check on the pan every few minutes, give the rice a stir to keep it from sticking, and add more stock.
When the rice has cooked for 15 minutes, add 1/2 the dissolved saffron. Continue to stir and when there is no more liquid in the pot, add the remaining saffron. Proceed with adding the broth
After approximately 18 minutes, when the rice is tender but still firm, add the reserved broth. The rice is done when it is tender, but firm to the bite. Turn off the heat and immediately add the remaining 1 tablespoon butter and the parmesan cheese, stirring vigorously to combine with the rice. Add salt and pepper to taste.
NOTE: To test the risotto for proper consistency, spoon a little into a bowl and shake it lightly from side to side. The risotto should spread out very gently of its own accord. If the rice just stands still, it's too dry, so add a little more stock. If a puddle of liquid forms around the rice, you've added too much stock. Spoon some liquid off, or just let the risotto sit for a few more seconds off the heat to absorb the excess stock.
Low-Fat Beef Stroganoff
8 ounces uncooked dry egg noodles
1/4 pound beef tenderloin, lean beef round, or sirloin (all visible fat removed)
1 teaspoon olive oil
1/2 medium onion, chopped
1 clove garlic, minced
1 (10 3/4-ounce) can 98% fat-free cream of mushroom soup, undiluted
1/2 cup sliced fresh mushrooms
2 teaspoons dried tarragon, crushed
1/2 teaspoon Worcestershire sauce
Salt and pepper to taste
1/2 cup non-fat sour cream
Cook egg noodles according to package directions; drain and return to pan to keep warm.
Cut meat into thin strips, about 1/3-inch by 2-inches long. In a large frying pan over medium-high heat, heat olive oil. Add steak strips and sauté until medium-rare; transfer onto a warm platter; cover loosely with aluminum foil to keep warm.
Reduce heat to low, add onion and garlic; sauté until soft. Stir in mushroom soup, mushrooms, tarragon, Worcestershire sauce, salt, and pepper; simmer until mushrooms are cooked. Add sour cream and the steak strips; stir until well blended. Remove from heat and serve over cooked noodles.
Makes 4 servings
Cincinnati Chili Recipe
1 large onion chopped
1 pound extra-lean ground beef
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon red (cayenne) pepper
1/2 teaspoon salt
1 1/2 tbsp unsweetened cocoa or 1/2 ounce grated unsweetened chocolate
1 (15-ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon cider vinegar
1/2 cup water
1 (16-ounce) package uncooked dried spaghetti pasta
Toppings (see below)
In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayene pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat.
Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).
Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served in a separate container on the side.
Cincinnati chili lovers order their chili by number. Two, Three, Four, or Five Way. Let your guest create their own final product.
Two-Way Chili: Chili served on spaghetti
Three-Way Chili: Additionally topped with shredded Cheddar cheese
Four-Way Chili: Additionally topped with chopped onions
Five-Way Chili: Additionally topped with kidney beans
Arroz Con Pollo
2 teaspoons extra-virgin olive oil
4 chicken breasts, boneless and skinless, cut into bite-size pieces*
1/2 cup long-grain white rice
1/2 cup onions, chopped
1 (14.5-ounce) can whole tomatoes, drained
1 (7-ounce) jar "roasted" red peppers, drained
1 cup fat-free chicken broth
1/4 cup parsley, finely chopped
1/4 teaspoon dried rosemary, crushed
1/4 teaspoons salt or to taste
Pinch of saffron, crushed
1 cup frozen petite peas
Coarsely ground black pepper to taste
* The U.S. Department of Agriculture, as well as food agencies in the United Kingdom and elsewhere, advises against washing poultry. Rinsing chicken will not remove or kill much bacteria, and the splashing of water around the sink can spread the bacteria found in raw chicken. Cooking poultry to 165 degrees Fahrenheit effectively destroys the most common culprits behind food-borne illness.
In a large non-stick frying pan over medium high heat, heat olive oil; add chicken pieces and saute, turning until browned, approximately 7 minutes. Remove chicken and transfer to a plate; set aside.
In the same frying pan, stir together rice and onion; cook approximately 2 minutes or until rice is translucent. Stir in tomatoes, red peppers, chicken broth, parsley, rosemary, salt and saffron. Return chicken to pan; cover and let simmer for 25 minutes. Stir in frozen peas and pepper; cook until rice is tender and almost all liquid is absorbed, about 6 to 8 minutes. Remove from heat and serve.
Makes 4 servings.
Sombrero Artichokes
1/2 cup chopped onion
2 cloves garlic, minced
1/2 pound lean ground beef
1 (15-ounce) can tomato sauce
2 tablespoons chopped fresh parsley leaves
1 1/2 teaspoons chili powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon red (cayenne) pepper
Hot pepper sauce to taste
4 large artichokes, cooked, choke removed, and chilled
Toppings (see below)
Diablo Dip (see recipe below)
In a large frying pan over medium-high heat, add onion, garlic, and ground beef; saute until beef is brown. Reduce heat to low. Add tomato sauce, parsley, chili powder, salt, pepper, cayenne pepper, and hot pepper sauce; simmer, uncovered, 15 to 20 minutes. Remove from heat.
Gently spread center leaves of chilled artichokes and spoon mixture into each artichoke center. To serve garnish with desired toppings and Diablo Dip.
Makes 4 servings
Toppings:
Sour Cream
Shredded cheddar cheese
Shredded lettuce
Chopped onion
Diablo Dip:
1 (8-ounce) can tomato sauce
1/2 teaspoon lemon juice
1 clove garlic, minced
1/8 teaspoon black pepper
1/8 teaspoon hot pepper sauce or to taste
In a small bowl, combine tomato sauce, lemon juice, garlic, pepper, and hot pepper sauce.
Yields 1 cup.
Tuna Salad Sandwich
2 (6-ounce) cans solid white tuna, drained well
2 tablespoons minced red bell pepper
2 to 3 tablespoons minced red onion
1 clove garlic, minced
1 teaspoon capers, drained and minced
1 tablespoon minced fresh cilantro leaves or basil leaves
1 teaspoon extra-virgin olive oil
Juice of 1 lime
1/4 cup reduced fat mayonnaise
1 teaspoon balsamic vinegar
1/4 teaspoon Tabasco or to taste
1/2 cup diced tomatoes
Salt and pepper to taste
In a medium bowl, break up tuna into flakes. Add red bell pepper, red onion, garlic, capers, and cilantro or basil leaves; mix together. Blend in olive oil, lime juice, mayonnaise, balsamic vinegar, Tabasco, tomatoes, salt, and pepper. Refrigerate at least 1 hour to let flavors blend.
When ready to use, remove from refrigerator. Spread either on bread or stuff in a large tomato.
Rice Meatloaf
1 pound extra lean ground beef
1/2 cup uncooked white rice (instant or minute rice)
1/4 cup finely chopped onion
1/4 cup minced red bell pepper
1 clove garlic, minced
1 teaspoon salt or to taste
1 teaspoon freshly ground pepper
1 tablespoon minced fresh or dried herbs of your choice (such as rosemary, basil, chives, sage, and/or tarragon)
2 teaspoons Worcestershire sauce
1 egg, beaten
1/4 cup tomato ketchup
1/4 cup skim or non-fat milk
1/4 cup dry bread crumbs
Preheat the oven to 350°F. Lightly grease a small loaf pan.
In a large bowl, combine the ground beef, uncooked rice, onion, bell pepper, garlic, salt, pepper, herbs, Worcestershire sauce, egg, ketchup, milk, and bread crumbs. Using your clean hands (removing any rings), mix together all the ingredients. Mix thoroughly but lightly, being careful not to pack the meat too much. NOTE: This meatloaf mixture will be moister than most recipes at this point. The extra liquid is needed for the rice to absorb while cooking.
Place in prepared loaf pan. Bake approximately 60 minutes or until meatloaf reaches an internal temperature of 160°F (do not overcook or it will be dry). Remove from oven and let the meatloaf rest for 15 minutes before serving.
Makes 4 servings.

recipe for stinky feet? HELPP!?
I'm pretty sure its common in athletes.
Anybody know any recipes to help stop stinky feet?
Soak them in iced tea! No joke... My mom and I saw this on Dr.Oz one time and one day after dance i came home and my feet were really stinky so i tried this and im pretty sure it worked!
But make sure you use the natural kind that you have to actually brew yourself, not the already made or powder kind. Also, i heard that putting baking powder in your socks/shoes could help too but i never actually tried this!

does anyone have any good low Fat Recipes? Im not the best cook but not useless i have to be on a low fat diet
the only thing i dont like is seafood( except tuna) i have had to change my diet massivley and dont have a great deal of low at dishes that i know how to make. I have 2 young kids one who eats everything the other who doesnt like spicy other than that im just looking for some good healthy meals which we can all eat.. any suggestions greatly appreciated. just want to add its a medical thing why i have to cut fat not for dieting im quite happy with me:) wobbles and all

Veggie Enchiladas
2 packages (10 oz. each) frozen chopped spinach, thawed
1 ½ cups sliced mushrooms
1 can (15 oz.) pinto beans, rinsed and drained
3 tsp. chili power, divided
¼ tsp. red pepper flakes
1 can (8oz.) low sodium tomato sauce
2 Tbsp. water
½ tsp. hot pepper sauce
8 (8-inch) corn tortillas
1 cup (4oz.) shredded Monterey Jack cheese
dash of salt
1.In a large skillet combine spinach, mushrooms, beans, 2 tsp. chili powder and red pepper flakes over medium heat.
2. Cook 5 minutes, stirring often. Remove from heat.
3. Combine tomato sauce, water, remaining 1 tsp. Chili powder and pepper sauce in a pie pan. Stir.
4. Dip tortillas into tomato sauce mixture and stack on wax paper.
5. Divide spinach filling into 8 portions. Spoon onto centers of tortillas.
6. Roll up and place tortillas in microwavable dish.
7. Spread tomato mixture over enchiladas.
8. Cover dish with vented plastic wrap. Microwave at medium for about 10 minutes.
9. Sprinkle with cheese. Microwave at Medium for about 1 minute or until cheese is melted.
Makes 4 servings. Per Serving: Calories 385, Total Fat 11g, Cholesterol 25mg, Sodium 741mg, Carbohydrates 55g, Dietary Fiber 2g, Protein 22g

Are my weight watchers activity points forfeited if I workout late?
I usually work out within 3 hours of going to bed. If I earn 2.5 points at 8pm, I don't want to eat anything extra before I go to bed around 11. If I know that I'm going to jog 2 miles, can I eat the points before working out, or do I lose them?
Thanks for the answers so far. I don't sleep very well on a full stomach, so I choose not to eat a few hours before bed. Also, if I were paying weight watchers for their program, I'd ask someone at the meetings my question - I'd just like to know the "rules". I always eat within a few hours of working out, but if I could add a point or two earlier in the day, I would.Thanks again!
It doesn't matter what time of day you eat. Calories in are calories in and calories out are calories out, not matter what time you exercise. It's the overall balance over a period of weeks and months and years of nutrition and exercise that affects your health and fitness levels.
High carb foods are great for spurts of energy, and if not used the carbs are stored for later use, but this has minimal affect on body composition.
Weight Watchers is a business to make money for the owner. Remember that.

Low carb low calorie vegetarian meal ideas?
I'm dieting and exercising but I've noticed when I eat carbs, even when I calorie count them, I do not lose weight easily. As I'm vegetarian I find it really difficult to come up with low carb low calorie food ideas. Anyone got any ideas? I pretty much like everything so any recipe/meal ideas which don't include meat, fish or poultry would be great.
I think it is a contradiction in terms. Vegetarian is whole grains, nuts, fruit, vegetables; but then, they say, eat milk and eggs. So, if you want low carb, just eat animal products. Or if you are a vegan, then you are eating all carbs, and that is that. It is your conscience or your weight.

low calorie recipes (bars, snacks, muffins, cakes) for a road trip?
so im going on a school trip for 3 days, and theres going to be about 16 hours total of driving between the whole trip. so ive been on my diet for only about 2 weeks now and i dont want to ruin it! but everyone is going to be snacking away and im afraid i will give in, so i plan to bring some of my own stuff. since there will be no fridges, i wont be bringing any fresh food really, and not much vegetables and fruit..
so does anyone know any recipes that are the lowest calorie they can find? anything, from muffins, snack bars, a cake, mock brownies.. anything thats kind of snackie but very low in calorie.
i am not picky, and quite frankly i dont even care if it is a bland taste or not very rich, i just want the experience of being able to snack with everyone.
any recipes here, or websites that have recipes?!

salt substitutes for cancer patients?
My grandma was diagnosed with lung cancer, and will be going through chemotherapy along with a great nutrition plan from "Beating Cancer with Nutrition". However, her holistic doctor recommended to try an alkaline diet (basic foods, non-acidic). So she needs to have low salt, but a lot of recipes call for salt. Anyways, my question is, is there a substitute for salt that will be good for a cancer patient?
Just leave out the salt.
Salt is generally used for 2 purposes, flavoring and preservation.
Unless you are planning to store the food for a length of time, the main reason for it to be in the recipe is flavoring.
People quickly adapt to a low salt diet and enjoy the flavors that used to be hidden by salt. Often a bland diet is better for cancer patients as their treatments often leave them nauseous.
