How do you make interesting cold salads?

Easy recipes But look good in a dinner party setting.

Strawberry Avocado Salad - Really delicious and wonderful "colors" in the salad so it makes it look good.

2 tablespoons white sugar
2 tablespoons olive oil
4 teaspoons honey
1 tablespoon cider vinegar
1 teaspoon lemon juice
2 cups torn salad greens
1 avocado - peeled, pitted and sliced
10 strawberries, sliced
1/2 cup chopped pecans

In a small bowl, whisk together the sugar, olive oil, honey, vinegar, and lemon juice. Set aside.
Place the salad greens in a pretty bowl, and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving, or serve immediately.
Serves 2.

Avocado and Tomato Salad - Also delicious and looks great.

4 large tomatoes, chopped
4 avocados - peeled, pitted and diced
1 red onion, thinly sliced
1/4 teaspoon ground black pepper, or to taste
1 (8 ounce) bottle balsamic vinaigrette salad dressing

In a large serving bowl, toss together the tomatoes, avocados and red onion. Dust lightly with black pepper, and pour salad dressing over. Cover and chill for at least one hour before serving to blend flavors.
Serves 6.

Really YUMMY chicken salad

2 1/2 cups diced and chilled, cooked chicken meat
1 cup chopped celery
1 cup sliced, seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 cup mayonnaise
1/4 cup heavy whipping cream

In a medium bowl, whip cream to soft peaks.
Combine meat, celery, grapes, almonds, parsley, salt, and mayonnaise with whipped cream. Chill.
Serves 10.

Does anyone know/have a chicken taco recipe that was on the back of Kraft mayo jar?

I remember some of the ingredients like chicken, mayo, salsa & green olives but not sure of others? I've been to their website with no luck. Any help would be greatly appreciated. Thanks!

I've had these recipe for years. I don't know if you got it from the Mayo jar. But I think I did. Hope it helps you out.

CHICKEN SALAD TACOS

2 1/2 c. diced cooked chicken (deli baked chicken is perfect)
1 c. pitted ripe olives
1/4 c. chopped green pepper
2 tbsp. chopped pimento
2 tbsp. sweet pickle relish
1 tbsp. finely minced onion
1/2 c. mayonnaise or salad dressing
1/2 tsp. salt
Dash of pepper
6 or 8 taco shells

Quarter olives. Combine all ingredients and mix well. Fill warmed taco shells. Top with shredded lettuce and/or shredded Cheddar cheese, if desired.

And, as Valentine's day falls halfway through the month there are still two weeks to go before you can really afford to splurge on such a luxury. And what if the weather is miserable? Do you really want to brave the elements when the ideal solution is much closer to home and will ultimately prove to be much more romantic.

Why not create a wonderful meal together in the comfort of your own home. You are saving on expensive restaurant bills and you can now afford to buy really exotic gourmet delicacies for your Valentine's day meal together. There may be many dishes you have longed to try when dining out but the cost of them has been somewhat prohibitive to say the least. Normally extravagant dishes such as filet mignon and shrimp are perfect for this occasion, or oysters and asparagus which are considered to be wildly sensual. And, Valentine's day wouldn't be the same without chocolate. Try hand made Belgian chocolate and truffles or chocolate laced with liqueur, or whatever you love most.

You and your partner spend you time thinking of the little (and big) things that will bring each other
joy. You definitely will have many things in common including food favourites. Consider creating a dish that incorporates his love of seafood, fish, chicken or pasta. You want this to be a special occasion that you will always remember, so that little extra effort is really rewarding. Use your best china, make sure that the cutlery is gleaming and lay your table with your finest table linens. Set the ambience by dimming the lights, or eating by candle light is even better. Have some soft seductive music playing in the background and a bottle of chilled champagne is the final touch.

Your Valentine's day dinner for two will definitely be more successful if you have your home entirely to yourselves. Don't share the evening with anyone else but yourselves. anyone have any really cheap good recipes they invented by accident that is great and want to share?

Sometimes we create things with what we have on hand and it turns out great. I know I do. for instance If I add a pound of cooked ground beef to 2 cans of chef boardi sphagetti and than top with cheese and bake, my kids love this as well as my husband. And its cheap and easy to make!!!! So I was wondering if anyone else has done anything like this

Funny you should ask....Just last week..it was rainy and I didn't want to go to the store. I thought about chicken pot pie and had no chicken and was out of carrots too. I diced potatoes, onions, celery and boiled them until semi-tender. I made a white sauce and put in chipped beef (like you would for SOS --chipped beef on toast) When the vegetables were done I added frozen peas and put them in the sauce. I put it in a sprayed casserole dish. At this point I debated over pie crust or biscuit top. I went with baking powder biscuit dough which I made from white flour, baking powder, butter and milk--no salt as the beef is salty enough. After getting my hands wet with water from the faucet, I spread the crust on top of the casserole. I baked it until the crust was done and we loved it both that night and reheated in the microwave on the following day. I bought more dried beef this week and am planning to make it again, but this week I will also add a few carrots.

I called it Chipped Beef Casserole.

I am very nervous and my father will probably be rude and judgmental because he is very protective. Cheeseburger Meatloaf

2 pounds ground beef
3/4 cup fresh bread crumbs
1/2 cup minced onion
2 eggs, beaten
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
3 cups shredded Cheddar cheese

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

Deluxe Mashed Potatoes

4 large potatoes
1 (3 ounce) package cream cheese, softened
1/2 cup sour cream
1 tablespoon chopped chives
3/4 teaspoon onion salt
1/4 teaspoon pepper
1 tablespoon butter or margarine
Paprika

Peel and cube the potatoes; place in a saucepan and cover with water. Cook over medium heat until tender; drain. Mash until smooth (do not add milk or butter). Stir in cream cheese, sour cream, chives, onion salt and pepper. Spoon into a greased 1-1/2-qt. baking dish. Dot with butter; sprinkle with paprika if desired. Cover and bake at 350 degrees F for 35-40 minutes or until heated through.

Colorful Veggie Bake

2 (16 ounce) packages frozen California blend vegetables, thawed
8 ounces process cheese (eg. Velveeta), cubed
6 tablespoons butter, divided
1/2 cup crushed butter-flavored crackers

Prepare vegetables according to package directions; drain. Place half in an ungreased 11-in. x 7-in. x 2-in. baking dish. In a small saucepan, combine cheese and 4 tablespoons butter; cook and stir over low heat until melted. Pour half over vegetables. Repeat layers.
Melt the remaining butter; toss with cracker crumbs. Sprinkle over the top. Bake, uncovered, at 325 degrees F for 20-25 minutes or until golden brown.

 --Cracker Barrel Chicken & Dumplings--

> Chicken and Broth:

3 quarts water

1 3-4 pound chicken cut up

1 1/2 teaspoons salt

1 small onion sliced

2 stalks celery, chopped

1 clove garlic, peeled and quartered

1 bay leaf

4-6 whole parsley leaves

1 teaspoon coarsely ground black pepper

1 tablespoon lemon juice

 

> Dumplings:

 2 cups all purpose flour

1 tablespoon baking powder

1 1/4 teaspoons of salt

1 cup plus 2 tablespoons milk

1. Bring the water to a boil in a large pot. Add the chicken, 1 teaspoon of salt, onion, celery, garlic, bay leaf, and parsley to the pot. Reduce the heat to simmer and cook the chicken, uncovered, for 2 hours. The liquid will reduce by about one third.

2. When the chicken has cooked, remove it from the pot and set it aside. Strain the stock to remove all the vegetables and floating scum. You only want the stock and the chicken, so toss everything else out.

3. Pour 1 1/2 quarts (6 cups) of the stock back into the pot (keep the leftover stock, if any, for another recipe-it can be frozen). You may also want to use a smaller pot or a large saucepan for this. Add coarsely ground pepper, the remaining 1/2 teaspoon of salt, and the lemon juice, then reheat the stock over medium heat while preparing the dumplings.

 

4. For dumplings, combine the flour, baking powder, 1 1/4 teaspoons salt, and milk in a medium bowl. Stir well until smooth, then let the dough rest for 5-10 minutes. Roll the dough out onto a floured surface to about a 1/2 inch thickness.

5. Cut the dough into 1/2 inch squares and drop each square into the simmering stock. Use all of the dough. The dumplings will first swell and then slowly shrink as they partially dissolve to thicken the stock into a white gravy. Simmer for 20-30 minutes until thick. Stir often.

6. While the stock is thickening, the chicken will have become cool enough to handle. Tear all the meat from the bones and remove the skin. Cut the chicken meat into bite-size or a little bigger than bite-size pieces and drop them into the pot. Discard the skin and bones. Continue to simmer the chicken and dumplings for another 5-10 minutes, but don't stir too vigorously or the chicken will shred and fall apart. You want big chunks of chicken in the end.

7. When the gravy has reached the desired consistency, ladle four portions onto plates and serve hot. Serve with your choice of steamed vegetables, if desired.

 

--Cracker Barrel Country Cornbread Dressing--

2/3 cup chopped onion

2 cups chopped celery

2 quarts of day old, grated cornbread

1 quart of day old, grated biscuits

1/4 cup dried parsley flakes

2 tsp poultry seasoning

2 tsp ground sage

1 tsp coarse ground pepper

4 ounces margarine

1 quart (32 ounces) plus 1 (14 ounce) can chicken broth

Preheat oven to 400 degrees F.

Mix onion, celery, grated cornbread, and biscuits, parsley, poultry seasoning, sage, and pepper in a large mixing bowl. Add melted margarine to mixture. Stir until well blended.

Add chicken broth to dry ingredients and mix well. The dressing should have a wet but not soupy consistency like a quick bread batter (banana bread or cornbread).

Divide mixture evenly into two (8 x 8 inch) pans sprayed with non-stick spray.

Bake uncovered for 1 hour until lightly brown on the top.

 

--Cracker Barrel Buttermilk Biscuits--

2/3 c Real buttermilk

1. Work together Bisquick and buttermilk to smooth dough. Dip hand in just enough Bisquick to kneed dough in bowl until smooth and elastic.

2. Shape dough into 16 thin patties, placing 1 atop another forming 8 biscuits in greased 9? round baking pan. Bake at 450 16 to 18 minutes or until golden. Wipe tops at once in butter. They split easily because of the way you formed them with the 2 pieces.

3. To make BONANZA Copycats, add 4 ts sugar. Shape into 6 patties, 1? thick, 3? round. Place close together in greased round baking pan. Wipe tops in soft butter. Bake 450 18 minutes or until brown.

4. Cool 10 minutes before serving. Split with thumbs instead of cutting with knife. These do not keep well. Right out of oven wipe tops again with dabs more butter to keep surface soft and tender.

 

--Cracker Barrel Double Chocolate Fudge Coca-Cola Cake--

 4 servings...

2 cups all-purpose flour

2 cups granulated sugar

3 tablespoons cocoa

1 cup butter or margarine

1/2 cup buttermilk

1 cup Coca-Cola

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

Pinch of salt

1 1/2 cups miniature marshmallows

Preheat oven to 350 degrees F. Grease and flour a 13 x 9-inch baking pan.

Combine dry ingredients in a bowl.

Heat butter, cocoa and Coca-Cola to boil and pour over the flour mixture. Mix well. Add eggs, buttermilk, vanilla extract and marshmallows and blend. The batter will be thin with marshmallows floating on top. Bake for 45 minutes.

> Frosting:

1/2 cup butter or margarine

3 tablespoons cocoa

6 tablespoons Coca-Cola

1 box confectioners' sugar

1 teaspoon vanilla extract

Boil first three ingredients. Remove from the heat and blend in the sugar and vanilla extract. Spread on warm cake.

It's served warm with premium vanilla bean ice cream. Enjoy a real Cracker Barrel tradition!

Olive Garden Stuffed Chicken Marsala Recipe

Chicken .
salt & pepper, to taste .
1 small onion, sliced .
4 oz cooking oil .
1 (8 oz) shredded mozzarella cheese .
1/4 c parmesan cheese, grated .
24 oz marsala wine .
1/2 tsp salt & pepper .
2 c flour .
1/3 c sour cream .
6 c button mushrooms, thinly sliced .
2 lbs boneless skinless chicken breasts .
2 tbsps sun-dried tomatoes, flakes if in oil drain first .
Sauce .
1 tsp fresh garlic, minced .
1/4 tsp crushed red pepper flakes .
1/2 c smoked provolone cheese .
8 oz heavy cream .
1/2 c breadcrumbs .
Cheese Stuffing

Directions

Step #1 Preheat oven to 350°F.
Step #2 Stuffing:Combine all cheese stuffing ingredients in a bowl.
Step #3 Chicken:Butterfly thickest section to create two lobes.
Step #4 Place lbed chicken breasts on a plate & place desired amount of stuffing on one half of chicken breast.
Step #5 Gently press stuffing down & fold over other side of chicken breast.
Step #6 Preheat a large sauté pan on stove top.
Step #7 Add 4 oz.
Step #8 oil; heat oil until shimmering.
Step #9 Place approximately 2 c flour in a pan & season it to taste with salt & pepper.
Step #10 Dredge chicken in flour & shake off excess flour.
Step #11 Place stuffed chicken breasts in sauté pan with the preheated oil.
Step #12 Cook each side until golden.
Step #13 When chicken is seared on both sides remove them from sauté pan & place them in a baking pan & into the oven for 10-20 mins.
Step #14 Bake until juices run clear & stuffing & center reach a temperature of at least 165°.
Step #15 Sauce: Add the onions to the sauté pan.
Step #16 Stir with spatula.
Step #17 After 2 mins add the mushrooms; sauté mixture until onions are translucent.
Step #18 Deglaze sauté pan with the marsala wine (make sure to incorporate particles from bottom of pan).
Step #19 Bring wine to a simmer & add heavy cream.
Step #20 Simmer sauce on low heat until reduced by half.
Step #21 Place cooked chicken breast on a plate & top this with onions, mushrooms & sauce.

The Great Falafel Sandwich - What's It All About?

The falafel sandwich is surely the most popular Israeli food.

Every country has its iconic sandwich: peanut butter and jelly in the United States, cucumber sandwiches at English tea parties, French bread and Brie.
In Israel, it's the falafel sandwich in pita.

And, like so many things in the Middle East, it is a hot potato. Israeli and Jordanian diplomats nearly caused a diplomatic crisis in Japan in 2007 when, during a cocktail party, each claimed the falafel sandwich as their country's national dish. Lebanon actually once considered suing Israel in trade court for falafel copyright infringement. (I suppose the case was dropped when the International Trade Court realized that next Italy would be suing the USA for pizza infringement, China would go after England for claiming tea as a national beverage and Belgium would be suing France for co-opting what should rightly be Belgian fries!)

So lets leave politics aside, break bread together in peace and agree that a good falafel is just plain delicious.

In Israel, you'll find kiosks selling falafel at street corners and it remains the best quick meal-on-the-go you'll find. Falafel is versatile, too: make them tiny and they become an elegant hors d'oeuvre at a party.

Recipes for homemade falafel vary, depending on which part of the Middle East the cook's family hails from. The basic ingredients are ground chickpeas, mixed with an egg, chopped parsley, ground cumin and coriander. Some people will add chopped onions; others swear you need a tablespoon of tehina paste (ground sesame seeds). Personally, I don't think it's a real falafel without lots of chopped cilantro and red pepper flakes thrown in.

Add some breadcrumbs or, to be more authentic, ground bulghur, and roll the paste into balls. Deep fry the balls until golden. Drain on a paper towel. If you're health conscious, you can still get a great tasting falafel by baking the balls instead of frying them. Spread the balls on a baking tray, spritz a little olive oil on them and make sure not to over bake.

Does this sound too complicated? Take it easy - grab a box of falafel mix! You'll find them in the ethnic foods section of most large supermarkets. It's a great party helper that only takes a few minutes to prepare.

Typical falafel are about an inch across, but you can make them hamburger-sized or as small as an olive.

To make the authentic Israeli falafel sandwich, cut open a pita. Line the pita pockets with tehina or chummus, fill with lettuce, chopped cucumber and tomatoes, and place a few falafel balls on top. If you wish, douse with hot sauce.

Other options you'll see include chopped pickles and fried eggplant. Experiment and be creative.

In a concession to globalization, so many kiosks now add French fries to their falafel sandwich that many young Israelis no longer remember they weren't part of the original deal. Authentic or not - and as strange as it may sound to stuff fries into a pita - it is surprisingly good.
