What is a healthy recipe for cooking a fillet of fish?
I am on a diet so I need a healthy recipe sor cooking a fish that has a very low number of fat and calories. You have to list the recipe, and the amount of calories and fat it contains. I will award anyone 10 points who has the best answer. Thank You!
It's talapia fish that I wanna cook.
Chinese Sea Bass (two servings)
3/4 c. 99% fat-free chicken broth
1 T. cornstarch
1 T. sesame oil
1 T. minced garlic
1 T. mined ginger
1 1/2 T. apple cider vinegar
4 tsp. soy sauce (light soy sauce preferred)
1 tsp. sugar
1 T. thinly sliced scallions (green onions) use both green and white parts
2 - 5oz. tilapia fillets
Combine broth and cornstarch until dissolved. In a small fry pan, stir fry garlic and ginger for 30 seconds. Add broth mix and bring to a boil, stirring constantly (about 1-2 minutes) or until thickened. Remove from heat. Season with salt and pepper.Set aside all but a couple of tablespoons of the marinade. (What you set aside can be passed when the dish is served.)
Pre-heat broiler. Brush both sides of fillet with marinade and grill for about five minutes each side. Plate the fish, and sprinkle with scallions.
Per serving: 150 calories, 17 gm fat

I'm looking for any really good grilling recipe(s) for Alaskan salmon, it's for my end of the schoolyear party
I'm throwing my annual end-of-the-scool-year party and I was looking for some good salmon grilling recipes. Keep in mind that it's for a lot of high schoolers (we live in Alaska so salmon is nothing new to us).
I'll have mine grilled with a little salt and pepper and a squeeze of lemon when it is ready please.
Sometimes plain is best, particularly if it is straight out of the river and you have caught it yourself.

This recipe calls for a whole fish. If you haven't grilled a whole fish yet, it isn't as difficult as it might sound. This is the traditional Mexican method for grilling snapper.
INGREDIENTS:
1 whole red snapper, split and butterflied (about 2 pounds worth)
1/2 cup achiote paste
1/2 cup orange juice
3 tablespoons lemon juice
3 tablespoons lime juice
PREPARATION:
Mix achiote paste (you should be able to find it in a Mexican market) with citrus juices. Cover all surface of the fish. Place in refrigerator and let sit for at least two hours. Light grill and get a medium flame. Oil grill and place fish skin side down. When fish is about half way done (about 5 minutes) turn and continue cooking another 3 minutes. The fish is done when the juices start boiling. You should be able to lift the central bone out easily when the fish is cooked. Top with heated salsa.
The traditional Mexican way to cook fish is to place it on a banana leaf. If you can find them, wash the leaf and place on grill while it's still wet. Then add the fish. This is an old trick to keep the fish from sticking to the grill and falling apart when you try to turn it.
Mustard-Grilled Red Snapper
Makes 4 servings
Ingredients
1/2 cup Dijon mustard
1 tablespoon red wine vinegar
1 teaspoon ground red pepper
4 red snapper fillets (about 6 ounces each)
Fresh parsley sprigs and red peppercorns (optional)
1. Spray grid with nonstick cooking spray. Prepare grill for direct cooking.
2. Combine mustard, vinegar and pepper in small bowl; mix well. Coat fish thoroughly with mustard mixture.
3. Place fish on grid. Grill, covered, over medium-high heat 8 minutes or until fish flakes easily when tested with fork, turning halfway through grilling time. Garnish with parsley sprigs and red peppercorns, if desired.

Tilapia Salad, recipe follows
Cashew Yogurt Sauce, recipe follows
Heat the grill. Cut the fillet in 1/2 lengthwise. Lightly season the fish with the cumin, cayenne, paprika, and salt. Coat each piece in olive oil and grill, 3 to 4 minutes on each side. To plate, begin by covering a dinner plate with a layer of cashew yogurt sauce. Place the pieces of grilled tilapia in the center, overlapping one another. Top the fish with the tilapia salad and place the tangerine segments around the plate.
This recipe was provided by professional chefs and has been scaled down from a bulk recipe provided by a restaurant. The FN chefs have not tested this recipe, in the proportions indicated, and therefore, we cannot make any representation as to the results.
Tilapia Salad:
1 honey tangerine
1/2 cup watercress
1 teaspoon tangerine zest
1/8 cup raw red beets, peeled and julienned
1 tablespoon cashews, roasted
Using a sharp pairing knife, remove the skin of the tangerine. Slice the tangerine into rings and remove any seeds. Mix the watercress, tangerine zest, and beets with the cashews. Serve with the grilled tilapia and cashew yogurt sauce.
Cashew Yogurt Sauce:
3 quarts plain yogurt
6 limes, juiced
1 1/2 bunches fresh cilantro leaves
6 large garlic cloves
4 tablespoons ground cumin
1 teaspoon cayenne pepper
3 teaspoons paprika
1/2 teaspoon kosher salt
Place all ingredients in a blender and blend on high until smooth. Taste for seasoning.

Healthy recipe for perch fillets?
I usually buy Talapia or Salmon but I found some perch fillets on sale so now I need to find a good way to cook them. The healthier recipes I've found require all kinds of ingredients that I don't keep in my kitchen.
Do you have a simple recipe that will taste great? If there's a way to bake it and make it taste fried, that would be even better.
get a small baking pan to fit the fish. Coat it with cooking spary. Put a very small pat of butter and a little minced garlic from a jar on the fish and bake it uncovered for 15 minutes. It's simple, tasty, and when it's done sprinkle with a little oregano if you have some and enjoy. Most times simple is best with fish.

Does ne1 have a really kick *** recipe for scallop scampi?
Scampi as you know is primarily for shrimp. The method is a simple quick fry with olive oil, garlic ( sliced as much as you want) and served with crusty french or Italian bread for dipping in the sauce. Nothing would change if using scallops. However, I just had a pancetta (thin uncured Italian bacon) or use proscuitto wrapped scallops ( just wrap a thin slice around the scallop holding it with a toothpick) that were grilled quickly ( you could pan fry) and served with a simple lemon basil sauce made with 1/4 cup good mayonaise with a squeeze 1/2 of fresh lemon and minced basil. It was outstanding. Don't overcook your scallops, like shrimp they only need a 2 minute saute to be just right. Good luck.

I've tried food network, and all recipes websites and you would think I could find one fish stew recipe, but I didn't. Can anyone help me with a fish stew recipe?
Here you go. Found it online for you.
Bouillabaisse
Ingredients
* 3 pounds of at least 3 different kinds of fish fillets, fresh or quick frozen (thaw first)
* 1/2 cup Olive oil
* 1-2 pounds of Oysters, clams, or mussels
* 1 cup cooked shrimp, crab, or lobster meat, or rock lobster tails
* 1 cup thinly sliced onions
* 4 Shallots, thinly sliced OR the white parts of 2 or 3 leeks, thinly sliced
* 2 cloves garlic, crushed
* 1 large tomato, chopped, or 1/2 cup canned tomatoes
* 1 sweet red pepper, chopped
* 4 stalks celery, thinly sliced
* 2-inch slice of fennel or 1 teaspoon of fennel seed
* 3 sprigs fresh thyme or 3/4 teaspoon dried thyme
* 1 bay leaf
* 2-3 whole cloves
* Zest of half an orange
* 1/2 teaspoon powdered saffron
* 2 teaspoons salt
* 1/4 teaspoon freshly ground black pepper
* 1 cup clam juice or fish broth
* 2 Tbps lemon juice
* 2/3 cup white wine
* Sliced French bread
Method
1 Heat 1/4 cup of the olive oil in a large (6-qt) saucepan. When it is hot, add onions and shallots (or leeks). Sauté for a minute, then add crushed garlic (more or less to taste), and sweet red pepper. Add tomato, celery, and fennel. Stir the vegetables into the oil with a wooden sppon until well coated. Then add another 1/4 cup of olive oil, thyme, bay leaf, cloves and the orange zest. Cook until the onion is soft and golden but not brown.
2 Cut fish fillets into 2-inch pieces. Add the pieces of fish and 2 cups of water to the vegetable mixture. Bring to a boil, then reduce heat and simmer, uncovered, for about 10 minutes. Add oysters, clams or mussels (though these may be omitted if desired) and shrimp, crabmeat or lobster tails, cut into pieces or left whole.
3 Add saffron, salt, pepper. Add clam juice, lemon juice, and white wine. Bring to a simmer again and cook about 5 minutes longer.
4 At serving time taste and correct the seasoning of the broth, adding a little more salt or pepper if need be, and maybe a touch of lemon juice. Into each soup bowl place a thick slice of crusty French bread, plain or slighlty toasted. Sppon the bouillabaisse over the bread. If desired, serve with Sauce Rouille. Serves 6.
Directions for Sauce Rouille:
1 Tbsp hot fish stock or clam broth.
2 cloves peeled garlic
1 small red hot pepper
1/2 teaspoon salt
1/4 cup soft white bread, pulled into bits
1/2 cup olive oil
Put hot fish stock or clam broth into the bottom of a blender. Add garlic and red hot pepper, salt and bread. Blend until very smooth. With the blender still running, add olive oil slowly and stop the blending as soon as the oil disappears.
At serving time pass Rouille in a little bowl along with the bouillabaisse. Each serving is about 1/2 a teaspoon that you stir into your soup. Use gingerly like Tabasco.

Recipe for frying or baking tilapia with panko crumbs?
Could someone please tell me how to fry or bake--tilapia with panko coating--do i just add salt and pepper? How long would i fry it? how long do i bake it?--if i bake it--is the dredging process the same as frying (flour, egg and panko?--and maybe some spray?)

I had panko coated tilapia for supper last night. You are right about dredging with flour then coat with egg and press in panko but I put it back into the egg and press again in panko. I fried it in olive oil with just a little salt & pepper for seasoning. I fried 2 minutes on one side & flipped for another 2 minutes.....just until the panko is golden. Served with a green salad and peas & carrots. Mmmm. No potato with this meal as the panko is quite enough. I also do the same thing with haddock, cod, pollock and sometimes halibut.
Baking is about the same timing but you will need to spray with a little EVOO otherwise it will dry out.

I want to learn how to cook, where's a good place to start?
I love food (who doesn't?) and I love watching Food Network. It's gotten to the point where I'm sitting there thinking that it doesn't look all that hard (or perhaps those pros just make it look easy).
Still, I'd like to learn. It's one thing to take some pasta and sauce that you bought at the grocery and boil some water and make yourself spaghetti, but I'd like to get more into it, and eventually start making my own pastas and sauces and stuff like that. I'd also love to learn more about preparing food in general, like vegetables, fish, beef, or knowing which spices to use for what dish, stuff like that.
Are there any good websites or videos with tips and recipes and things like that that I could check out?
The pro just 'make' it look easy.
There are many websites you can pick from, but the best start is in the kitchen with you mother to pick up the food handling tips and techniques as well as knife skills.
You can read and learn a lot from a web-site or two and how to make any thing, but if you can't use a sharp knife or other utensils then you will never be a great cook.
I learned helping Mum, and that involved peeling the spuds...tons of them (I was one of eight)
