recipe for eggplant marinated in tamarind?
I was recently at a resort in Goa and was served the most amazing side dish of some small eggplants that were somehow soaked or marinated in tamarind so that they had a remarkably similar texture and taste to a sweet-sour plum, with a slight glazed sauce, as I recall. There was no fried crust or oniony-garlic flavor, nor were there other noticeable ingredients with the dish. It was served as part of a mezze, but my Indian husband said this type of eggplant dish was from North India. I have had no luck finding any recipes that come close to recreating this absolutely amazing flavor and texture and I hope someone could tell me if this is a typically Middle Eastern or Indian dish, and where I could learn more about how to make it. Thanks!
Spicy Eggplant in Ginger-Tamarind Sauce (Masala Vangi) Recipe
Directions: Put the tamarind in a nonmetallic bowl. Add 1/4 cup boiling water and let it soak for 30 minutes. Mash the pulp and extract as much juice from it as possible. Pour all liquid into a bowl, and save the fibrous residue for making the sauce. Slit the eggplants lengthwise to within 3/4 inch of the stem end so that each eggplant remains in one piece. Measure out the spices and place them right next to the stove in separate piles. Heat 2 tablespoons of the oil in a large frying pan or skillet over medium-high heat for 1 minute. Add the garlic and fry for 30 seconds. Add the coriander, cinnamon, and cloves; fry for 15 more seconds. Stir in the coconut and cayenne pepper; continue frying, stirring, until lightly toasted (about 2 minutes). Turn off the heat and stir in the salt, tamarind liquid, and molasses, and mix well. Stuff the eggplants with the spicy coconut mixture. Secure them by wrapping thread around them. Heat the remaining 1 tablespoon oil in the same pan over medium-high heat. When it is hot, add mustard seeds. Keep a pot lid handy, as the seeds may spatter and fly all over. When the seeds stop spattering, add the eggplants in one layer. Fry the eggplants, turning them often, for 3 or 4 minutes. Reduce heat to medium or medium low and cook them, covered, for 10 to 12 minutes or until they are soft and cooked through. Turn off heat. Transfer them to a serving platter, pour Ginger-Tamarind sauce over them, and serve immediately. GINGER-TAMARIND SAUCE: Put tamarind residue in a nonmetallic bowl, add 1/2 cup boiling water, and let soak for 30 minutes. Mash the residue and extract as much tamarind essence as possible, squeezing it hard, into a bowl. Discard the fibrous residue. Put tamarind water in a nonmetallic pan along with cornstarch, mix well and bring to a boil. Cook for 2 minutes. Turn off heat and stir in ginger shreds. Note: For a hotter flavor, stir 4 chopped hot green chilies into sauce.

1 1/2-inch-round ball tamarind
1/4 Cup(s) Boiling water
1 Pound(s) Thin, long eggplant
3 Tablespoon(s) Light vegetable oil
1 1/2 Teaspoon(s) Minced garlic
2 Teaspoon(s) Ground coriander
1/4 Teaspoon(s) Ground cinnamon
1/8 Teaspoon(s) Ground cloves
1/2 Cup(s) Packed flaked coconut
1 Teaspoon(s) Cayenne pepper (or more)
1/2 Teaspoon(s) Coarse salt; or to taste
2 Tablespoon(s) Unsulphured molasses
1/2 Teaspoon(s) Black mustard seeds
1/2 Teaspoon(s) Cornstarch
1 Tablespoon(s) Shredded fresh ginger

Tamarind Eggplant With Mint Gremolata And Toasted Pine Nuts
Serves 4
In this tangy recipe the eggplant is grilled with a little olive oil and then dipped briefly in a slightly sweet marinade.
Ingredients
For Eggplant:
1 ½ pounds eggplant
Salt
Vegetable oil in a spray bottle, or a brush to brush on oil
Marinade:
2 teaspoons tamarind concentrate
2 tablespoons agave nectar
1 tablespoon white wine vinegar
1 tablespoon water
2 teaspoons fresh grated ginger
1 teaspoon peanut oil
1 teaspoon soy sauce
Gremolata:
2 tablespoon chopped mint
1 teaspoon finely minced lemon peel
2 cloves garlic, finely minced
To serve:
¼ cup pine nuts
Directions
1. Prepare the eggplant: Slice eggplant into ½-inch rounds. Sprinkle a layer of salt onto each slice and rub into eggplant. Place slices in a large colander in the sink for about half an hour. Moisture will release from the eggplant. In the meantime, toast the pine nuts and prepare the marinade.
2. For the toasted pine nuts: Preheat a large, heavy bottomed pan (preferably cast iron) over medium low heat. Toast pine nuts for about 3 minutes, stirring frequently, until honey to amber brown. Remove from heat immediately.
3. For the marinade: Mix other all marinade ingredients in a large, shallow bowl. Cover until ready to use.
4. After half an hour, rinse eggplant in cold water and pat dry with paper towels. Prepare your grill on medium heat. Coat eggplant in a thin layer of oil and grill on each side for 3 minutes. Flip eggplant so the grill marks make crosshatches, and grill on each side for another 2 minutes each.
5. Dip each slice in the marinade, coating on both sides and place on a serving plate. To serve, sprinkle with gremolata and pine nuts.
6. For the gremolata: Prepare right before serving by mixing all ingredients together on a small plate.

Per serving: 211 calories, 14 g fat (1 saturated), 22 g carbohydrates, 3 g protein, 7 g fiber, 81 mg sodium (6% Daily Value).

Need serious advice about a new concept in business…?
I live in India and I am working for a company which provides online tuitions to students of USA.
Company is planning to start Online Teaching of Indian dishes/recipes. In this new concept, people will book sessions in advance. Best of the Chefs will teach them practically by using Skype and Web Camera (Audio+Video).
I want your opinion. Do you think people will pay to learn Indian Dishes? During my trips in various countries I have noticed that so many people love Indian Food (curries etc.) but will they like to pay to learn it?

HI, I am a very beginner cook and I don't know much. I can do simple things like bake cakes (by reading the direction on the package) and make pasta (with packaged sauce).
I would appreciate it if anyone could give me some recipes. Make sure to keep them simple and DETAILED. (Sorry about the capital letters, but you can make things bold.) I would like vegetarian recipes, because I don't want to have to prepare meat yet. (I'm not vegetarian, I just want to start at the bottom and go up.) I would really appreciate Indian curries, as I am south Indian. Thanks a lot in advance.

* 1/2 cup heavy cream
* 1/4 cup butter
* 2 tablespoons cornstarch
* 2 tablespoons milk
* 1 teaspoon vanilla extract
* 2 tart apples - peeled, cored and sliced
* 1 tablespoon all-purpose flour
* 1/4 teaspoon ground cinnamon
* 1 (15 ounce) package pastry for double-crust pie
* 1/2 cup confectioners' sugar
* 1 tablespoon milk
* 1/4 teaspoon vanilla extract
* 1 tablespoon butter, softened
DIRECTIONS
1. In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter. Heat until butter is melted, stirring occasionally. In a small bowl, whisk together the cornstarch, 2 tablespoons milk, and vanilla; stir into saucepan. Cook until thickened, stirring constantly. Remove from heat, and set aside to cool slightly.
2. Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine the apples, flour, and cinnamon. Mix well.
3. Line a 9 inch pie pan with pie dough. Pour thickened filling mixture into pastry-lined pie pan. Arrange apple mixture evenly over filling. Top with second crust, seal and flute the edges. Cut slits in top crust.
4. Bake for 30 to 40 minutes, or until crust is golden brown and apples are tender. Cool for at least 30 minutes.
5. In small bowl, combine confectioners' sugar, 1 tablespoon milk, 1/4 teaspoon vanilla, and 1 tablespoon softened butter. Blend until smooth; pour evenly over warm pie. Refrigerate for AT LEAST 1 1/2 hours before serving (longer is better).

Help! Difficult palette. Any recipes?
I'm having a friend over and she doesn't eat anything that I know how to make. She doesn't eat fish, meat, mushrooms, cheese, tofu or olives. To make matters worse, she's not into Indian or Thai food(which are exactly the recipes I turn to when I need to make a vegetarian meal). Any ideas?
Vegie burgers and little chunky roasted potatoes.
Cooled mashed potato
grated carrot (as much or as little as you please)
diced onion
a little garlic
chopped parsley or any green herb that isnt too overpowering (or anything green for colour)
salt & pepper
2 tablespoons of plain flour
Mix all ingredients together, shape into patties, roll in breadcrumbs then leave to sit in fridge for an hr or 2.
When you are ready to eat then shallow fry them in your oil of choice. Meanwhile, butter your burger buns, add some lettuce and tomato and maybe some mayonaise if you like, then add burger and you are all good to go.
Spuds. Do these while your burgers are in the fridge.
Enough potatoes to feed you both, cut them into large cubes,
a little oil and small dollop of butter, put them in a warm to hot oven... us aussies work in celsius but a rough guess would be at 400F for 30 mins then give them a stir and go again for another 30, you want them toasty brown so depending on your oven you may need to give them a 3rd round.
If they are cooked before the burgers then you can just turn them down and leave them to keep warm.

Spicy Curry Powder Recipe
Ingredients:
* Coriander seeds- 1/2 cup
* Cumin seeds- 1/4 cup
* Black mustard seeds- 1 tablespoon
* Black peppers- 1 tsp
* Red chilies- 5
* Fenugreek seeds- 3/4 tsp
* Turmeric powder- 2 tsps
* Dried curry leaves- 20
Method:
In a heavy-bottomed pan fry all the ingredients for 5 minutes over medium heat. Remove from heat. Grind all the roasted ingredients together to a powder. Store in an airtight container.
Basic Curry Powder (Indian Curry) Recipe
6 dried red chilies

Directions:
This medium-hot curry blend can be used in any dish that calls for curry powder.
Remove the seeds from the chilies. Dry roast the whole spices over a medium heat until they darken, stirring or shaking the pan frequently to prevent burning. Leave to cool, then grind to a powder. Dry roast the curry leaves in the pan for a few minutes, then grind and add them to the mixture with the ginger and turmeric, blending well.

Description
Widely used in Indian cooking, authentic Indian curry powder is freshly ground each day and can vary dramatically depending on the region and the cook. Curry powder is actually a pulverized blend of up to 20 spices, herbs and seeds. Among those most commonly used are cardamom, chiles, cinnamon, cloves, coriander, cumin, fennel seed, fenugreek, mace, nutmeg, red and black pepper, poppy and sesame seeds, saffron, tamarind and turmeric (the latter is what gives curried dishes their characteristic yellow color). Commercial curry powder--which bears little resemblance to the freshly ground blends of southern India--comes in two basic styles: standard, and the hotter of the two, "Madras" curry powder.
Uses
Curry powder is used to flavor soups and stews, and is great for adding a kick to all kinds of sauces and marinades, as well as meatloaf and burgers, and chicken, tuna, pasta and potato salads. Since curry powder quickly loses its pungency, it should be stored, airtight, no longer than two months.
Origins
"Curry powder" as we know it was a British invention, not an Indian one, intended to capture the flavor of Indian cooking without the painstaking effort of custom-blending, roasting and grinding spices for every dish prepared. And even more strangely, most curry powder doesn't even contain curry leaves! Curry became a great favorite in Britain at the end of the nineteenth century, and its popularity soon spread to Japan.
Flavor Trend
Americans once primarily enjoyed curry in Indian and Thai restaurants. Now, curry blends are being added to familiar foods, from a simple roast chicken breast to sautéed shrimp and vegetables. Curry is a key element of South and Southeast Asian, Caribbean, Japanese, English and Australian cooking. At the heart of most curry blends is a flavor base of black or red pepper, coriander and cumin. A number of spices can be added to this base to create different flavor experiences. Garam masala, for example, is a sweeter curry, featuring cardamom, cinnamon and cloves. Hot Madras curry delivers the heat and intense flavor of the Madras region of India and also includes fenugreek, turmeric and garlic. Red curry blends are a complex mix of select spices, chile peppers and cardamom. As Americans become more familiar with curry, they’re discovering a wide range of flavor possibilities.

Goan Curry Powder
3/4 cup shredded unsweetened dried coconut
1 tablespoon minced garlic
4 fresh green chili peppers, such as serrano, thinly sliced
3 tablespoons coriander powder
2 tablespoons white poppy seeds
1 tablespoon black peppercorns
1 tablespoon fennel seeds
1 tablespoon ajwain seeds
10 cardamom pods
10 cloves
1 teaspoon ground turmeric
1. In a medium-sized skillet, roast the coconut over medium heat, stirring
continuously for about 8 minutes until it is golden and crispy. Transfer to a
bowl.
2. In the same skillet, dry roast the garlic and green chili peppers over
medium heat, stirring continuously for about 8 minutes until it is dry
and golden.
3. Place the remaining spices in the skillet and dry roast over medium heat,
stirring and shaking the pan until they are golden and very fragrant. Remove
and cool.
4. Mix all the roasted ingredients together, put in a spice grinder in batches,
and process at high speed until spices are finely ground like powder.
5. Pour into a non reactive container, cover tightly, and store up to 3 months
Garam Masala
This easy-to-make spice blend is the heart of most Indian dishes. A combination of different spices, it probably has as many recipes as there are families in India! Here is a basic one. Once you get a feel for the taste it gives your cooking, experiment and alter it to suit your needs.
Garam masala is best made fresh just before you begin cooking, but if you haven’t got the patience (like me!), make a batch ahead and store for several months in an air-tight container in a cool, dark place.

Cook Time: 0 hours, 4 minutes
Ingredients:
* 4 tbsps coriander seeds
* 1 tbsp cumin seeds
* 1 tbsp black peppercorns
* 1 ½ tsps black cumin seeds (shahjeera)
* 1 ½ tsps dry ginger
* ¾ tsp black cardamom (3-4 large pods approx)
* ¾ tsp cloves
* ¾ tsp cinnamon (2 X 1” pieces)
* ¾ tsp crushed bay leaves
Preparation:
* Heat a heavy skillet on a medium flame and gently roast all ingredients (leave cardamom in its pods till later) except the dry ginger, till they turn a few shades darker. Stir occasionally. Do not be tempted to speed up the process by turning up the heat as the spices will burn on the outside and remain raw on the inside.
* When the spices are roasted turn of the flame and allow them to cool.
* Once cooled, remove the cardamom seeds from their skins and mix them back with all the other roasted spices.
* Grind them all together, to a fine powder in a clean, dry coffee grinder.
* Store in an air-tight container in a cool, dark place.
