Can you help with our 7 course menu?
Hi, I'm in culinary school and am planing a menu for a 7 course meal final exam. I was looking for a little guidance on a couple of courses (I'll mark with a * and ask at the end) and for your opinion on the menu thus far. The theme of the menu is "A guy's night out"
Canapé - mini sausage and pepperoni pizza Canapé
Appetizer - glazed grilled shrimp*1
Soup - Hearty Loaded Potato Soup
Salad - Chopped Salad*2
Intermezzo - Corona and Lime sorbet
Entrée - pan seared tenderloin steak served with Pommes Anna, fried Leeks, and monkey gland sauce
Dessert - Bread Pudding with bourbon sauce
*1- we are having a hard time coming up with a glaze any ideas would be appreciated
*2- Looking for a basic chopped salad recipe
Some ideas for a glaze:
Ing:
1/2 cup firmly packed brown sugar
8 tablespoons butter, cut up
1/2 cup dark rum
4 tablespoons Dijon-style mustard
2 cloves garlic, minced
1 tablespoon white vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon black pepper, or more to taste
1/8 teaspoon salt
Place all ingredients in a saucepan and bring to a boil over high heat. Reduce the heat to a simmer and continue to cook until the mixture is thick and syrupy, about 3 to 5 minutes. Adjust seasoning, adding salt and pepper as necessary.

Ing:
1/3 cup Lime Juice
1/2 cup Honey
1 tsp freshly ground white pepper, or to taste
1/2 tsp sea salt
Combine ingredients, brush on shrimp while grilling.

Ing:
1 cup apricot jam
1/2 cup olive oil
1/3 cup balsamic vinegar
1/4 teaspoon salt
Fresh ground pepper to taste (about 10 to 15 grinds)
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon thyme (dried preferred)
1/4 teaspoon onion powder
Heat just to boiling. Reduce heat and simmer for 15 minutes. Brush on shrimp while grilling.

Chopped salad ideas:
Ing:
* Salad Ingredients:
* 1 lg head chopped romaine lettuce
* 1/2 cup salami, chopped into 1/4 inch cubes
* 1/2 cup mozzarella, chopped into 1/4 inch cubes
* 2 Roma tomatoes, chopped
* 1 small red onion, chopped
* 1/4 cup pepperoncini peppers, chopped
* 1 small can garbanzo beans
* 1 small can sliced kalamata or black olives, drained
* 1/2 tsp each salt; pepper
* 1/2 tsp dry oregano
*
* Balsamic dressing:
* 1 clove garlic, peeled
* 1/2 tsp salt
* 1/2 cup balsamic vinegar
* 1 shallot, minced
* 1 tsp dijon mustard
* 1/2 tsp black pepper
* 1/2 tsp oregano
* 3/4 cup olive oil
Salad Dressing: Combine all except the olive oil in blender for 30 seconds. While continuing to blend, pour olive oil slowly through blender lid until dressing is thick and creamy. Refrigerate in a container until serving time.
Salad: Put chopped lettuce into a medium salad bowl. Add all other chopped ingredients on top as well as the garbanzos and olives. Sprinkle with salt, pepper and oregano and serve with balsamic dressing.

* 1 large head romaine lettuce
* Italian salad dressing
* 2 hard-cooked eggs, sliced or chopped
* 1 can (2 oz.) sliced black olives, drained
* 6 to 8 fresh mushrooms, sliced
* 2 green onions, thinly sliced
* 1/4 cup chopped walnuts or toasted sunflower seeds
Toss together and serve.

Any/all of these veggies cut into bite-sized pieces or chopped:
cabbage
red cabbage
broccoli
cauliflower
radishes
carrots
cucumbers
red bell peppers
celery
jicama
turnip
Optional additions:
grated cheese
peanuts
sunflower seeds
hard-boiled egg
olives
Toss with a creamy dressing (ranch, creamy Italian, Bleu Cheese....etcetera).

All of these serve about 4, so think of that when making the recipes. They all double very well. Good luck on your exam!

Does anyone have a good recipe for Candied Yams?
I'm supposed to fix candied yams for thanksgiving and was wondering how other people made them. Thanks!!
Perfect Candied Yams
2 pounds garnet yams or sweet potatoes
3 (2-inch) strips orange zest, white, spongy pith removed
2 cinnamon sticks, broken in half
1/2 cup freshly squeezed orange juice
1/3 cup pure maple syrup
2 tablespoons pure olive oil, light sesame oil, or unsalted butter
1 tablespoon freshly squeezed lemon juice
2 teaspoons peeled and finely chopped ginger root
1/2 teaspoon coarse sea salt
Preheat the oven to 375°F.
Peel and halve the yams crosswise. Cut each half lengthwise into 4 wedges. Place the yams in a baking dish that will hold them in a snug single layer. Tuck the orange zest and cinnamon sticks among the yams. In a bowl, whisk together the orange juice, maple syrup, oil, lemon juice, ginger, and salt. (Note: if you're using butter, omit it in this step, but dot the assembled casserole with small pieces of it before it goes into the oven.) Pour the mixture over the yams. Bake for 1 1/4 hours, basting every 15 minutes, until the yams are tender and glazed and the pan juices are syrupy. Remove the orange zest and cinnamon sticks before serving.

How can I make a SIMPLE BURGUNDY STEAK?
How can I make a simple burgundy steak in a skillet or oven(I Don't have a grill) with these ingredients:
-Shallots
-Garlic
-Flour
-Burgundy Wine
-Sirloin Steak
-Butter
I don't want to cube it, as most recipes for burgundy steak call for. Should I sear it in the skillet first and then bake it, or broil it?
BURGUNDY ROUND STEAK OVER RICE
1 1/2 lb. boneless round steak
1/4 c. all-purpose flour
1/8 tsp. ground cinnamon
1/8 tsp. ground cloves
1/8 tsp. pepper
2 tbsp. bacon drippings
1 med. onion, chopped
2 cloves garlic, minced
1 can tomato sauce
1/2 c. burgundy or other dry red wine
1/4 tsp. salt
Hot cooked rice
Trim excess fat from steak; slice diagonally across grain into 3/4 in wide strips. Combine flour, cinnamon, cloves, pepper, dredge steak in flour. Preheat a 10 inch browning dish in microwave on high for 8 or 9 minutes. Add bacon drippings; let stand till melted. Add steak, onion, garlic; stir well. Microwave on high for 4 minutes. Stir after 1 1/2 minutes. Add tomato sauce, wine and salt. Cover with plastic. Microwave on medium 30 to 35 minutes, stirring every 10 minutes. Serve over rice

I have eaten these sepeartely for the past 3 meals. Any simple recipes that can make them a slight bit different?
cut up the pork and add to beans. Add cheese to your potatoes. That's the best I can do without knowing what you have in your pantry. How do you prepare your bbq green beans? I have only heard of one other person who knows this recipe. My grandma has made it all my life, I'm eating some right now!!

What can I take to my Christmas Party?
I need a good recipe for my Christmas party. We are already having 2 desserts, Mac & Cheese, Carrots, Corn, Sweet Potato Casserole, Green Bean Casserole, Mushroom Rice, and our main dish is a Chicken Casserole.....
I am thinking of possibly bringing something to be served as an appetizer. Anyone got any ideas? Or another side that would be good? The past 2 years I have taken a dessert, and it never gets touched, because by the time everyone gets through all of the food, they are full!!!!
This is an old cocktail meatball recipe from a Betty Crocker Cookbook.
It is an appetizer that people really really enjoy.
We have made it many many times and it always goes over well. I think the grape jelly is the secret ingrediant. Give it a try and follow directions, it will be good.
COCKTAIL MEATBALLS
Brim your chafing dish high with these hearty hors d'oeuvres. And don't forget to supply picks - and plenty of them - for easy eating. 1/2 c. dry crumbled bread crumbs, 1/3 c. minced onion 1/4 c. milk 1 egg 1 tsp. salt 1/8 tsp. pepper 1/2 tsp. Worcestershire sauce 1/4 c. shortening 1 bottle (12 oz.) chili sauce, Heinz 1 jar (10 oz.) grape jelly, Welches
Mix ground beef, bread crumbs, onion, milk, egg and next 4 ingredients; gently shape into 1 inch balls.
Melt shortening in large skillet; brown meatballs. Remove meatballs from skillet; pour off fat. Heat chili sauce and jelly in skillet, stirring constantly, until jelly is melted. Add meatballs and stir until thoroughly coated. Simmer covered 30 minutes. 5 dozen appetizers.

Have a Zombie Roast in the fridge--do you have any recipes to share?
I just came from my local Piggley Wiggley---I think they are the last grocery store to have S & H Stamps---well anyway---they have great cuts of meat each week!
Last week they had Ground Clown for 2.99 lb- this weeks special was Zombies--They had Leg of Zombie for 1.99 and beautiful Zombie Roasts for 2.45lb. I got a 5lb roast. I figured I would serve it with red potatoes and red cabbage.
I was just wondering if any of you have any good recipes for Zombie Roasts. I have never made it before--they say its a very tender meat--
Would greatly appreciate any recipes or cooking instructions---what should I serve with the Zombie Roast? What wine do you suggest?

Zombie Roast
(serves six)
Ingredients:
5 lb Zombie roast
1 quart Vampire Blood
1 tsp Werewolf hair
1 tsp blessed salt
3 tbsp holy oil
pinch rust from machete
1 large roasting pan
Marinate the roast in the blood, with the rust mixed in, for at least 2 hours but up to 24 hours.
Preheat oven to 425.
Place roast in large roasting pan, drizzle with oil, and sprinkle with hair and salt.
Cook at 425 for 15 minutes, then reduce to 325.
Roast until internal temperature registers as -186 for a medium rare roast. As you know, the hotter the oven, the colder the roast will get as Zombie flesh reacts with heat by chilling to preserve itself.
Serve immediately after taking out of the over. Flesh should be chilled, but incredibly tender. If allowed to heat, zombie may reanimate and try to consume dinner guests, so serving immediately is vital.
Unless you have a dinner party next week and a guest you don't really like in which case you'll be able to save on your next party by allowing that guest's meal to warm up prior to consumption.
Good luck with your party, let me know how it goes! If you need it, I have a really great recipe for garlic soup and another that, well, we like to call Darth Seder. If you still have all those storm troopers around, it's a real treat.

I'm looking for recipes for potatoes au gratin?
I am to bring au gratin potatoes to a family get together on Christmas Eve, and am wondering if anyone has a special recipe they would share with me. I've made them many times in the past, but since I became disabled and live alone I just don't cook like I used to (In the past I used to be considered a REALLY good cook.) My family is looking forward to one of my famous "fabulous" dishes, and I'm getting nervous. I checked the Food Network, and couldn't find anything that sounded like what I think they're expecting, and would really appreciate any help anyone can give me. Happy Holidays to everyone!
A couple of these recipes sound really good, but I am feeding about 10 people, and am not sure of the quantities of ingredients needed. Also, the "herbed au gratin started sounding REALLY interesting, but the end got cut off, so I didn't get the whole recipe. Can you please help? (especially the herbed-I love to use Panko bread crumbs, and wanted to in my dish.)

What food would go well with my cheesy mashed potatoes tonight?
I'm a horrible cook and want to make dinner for my girlfriend tonight. I have a recipe for mashed potatoes from a friend that I know she will like, what else can I do to accompany this dish?
Round steak in natural gravy with onions, and steamed broccoli.
Take your round steak, cut into serving sized pieces, and salt and pepper it. Sear it in butter. When it is brown add an onion sliced fairly thick, and cook down until onion is almost clear. Then add some water, lower heat, cover, and cook for approximately 30 to 40 minutes. Keep checking to be sure that there is some juice left so as not to dry up you meat. If juice cooks down, add some more water. Steak will be nice and tender. Serve steak with onions on top.

Chicken and red potatoes in a crock pot?
I recently had surgery and because of my pain med can't drive. I have Chicken breast, red potatoes, zuchinni and some onions in the house. I also have some basic seasons (garlic, salt pepper and a few others) I want a easy crock pot recipe I can have ready for my husband when he returns from his business trip tomorrow. Any ideas?
Here's what I did with chicken and veg. in a crock pot when I worked a lot of overtime.
Ingredients:
Chicken pieces, skinned. Leave the bones in for flavor.
Cut up pared potatoes, and other root veg. or squash.
Water to cover
Method:
Place potatoes on bottom of crock in a layer.
Layer other veg. over.
Lay skinned chicken pieces over the vegetables.
Add seasonings like salt and pepper, if desired.
Cover with water or with water and half white wine.
Set on low.
Cover
When 8 hours or more have passes, remove all of the solids and place in a large bowl. Strain the broth if you like.
Remove the chicken bones, and cut the meat (or tear) into bite size bits.
Taste the broth. Adjust seasonings.
Return the broth and the solids to the crock pot. Place on high for a few minutes, covered.
Prepare other parts of the meal: bread, salad, dessert
Serve in a bowl.
