1 year ann. help with food?
I am planing on smoking a rump roast or an eye round roast or something of that sorts. what would be a good side dish? please help fast. please dont give me a recipe or a web site. just give me a gist. and Im also feeding my mom and sister. thanks for the help. I may chang my mind and smoke some pork ribs so if you have any good side dishes for that Id appreciate it. please anything you give me must be like a master peace. I normally do really really good stuff it just that this time im in a bind. thanks.
I agree, that I would go with something I knew how to make well. That said, there are many simple sides that would go well with beef. Think things that are usually served with steaks, for example. Creamed spinach, potatoes au gratin, even french fries can be elegant if you cut them nice and thin. I also like mushrooms with beef. Cognac mushroom sauce is very tasty on top, or a cassoulet with a variety of mushrooms would be so fancy and would taste good!
If you go with a white meat, then there is a sweet potato dish that is a classic in my family, it is really great. It's from a classic Betty Crocker Cookbook, Sweet Potatoes with Orange Sauce. Basically you make a sauce out of orange juice, butter and sugar, pour it over cubed sweet potatoes in a casserole, and bake until they are soft.
Good all purpose sides that I like to eat: green beans amandine, wild rice (you can add dried fruit, it's very good especially with white meats), carrots can be cooked with an orange sauce or spices like cinnamon, a nice green salad with homemade dressing, couscous, stuffed vegetables (tomatoes, avocados, mushroom caps).
Any of these can be made to look fancy and taste wonderful. Even though some of them are indeed quite simple, they could be masterpieces, depending on your skill and creativity!

What's a good way to cook a rib eye steak without a grill?
I bought a couple of rib eyes earlier today, because I'm really in the mood for steak & potatoes... only thing is, I just found out today that my grill is busted and I don't have the money to pay for a new one so fast. So help me out, and give me some good recipes/tips for cooking a rib eye without one?
Also, if you have a good recipe for sweet baby carrots, that would be much appreciated, as well.
Get your pan searing hot, the cook it that way. I think it is delicious and makes a killer crust on thee outside. Just make sure you season it well. If you want to not overwhelm it, preheat your oven to 350 and finish the steak in there after you sear it. After you sear your meat if you want it well down turn down the heat on the last side of the meat.
A little lime on this steak rocks!
Personally I think all rib eye should be seared in a hot pan, it brings out the butteryness of the steak.
Baby carrots, blanche them in salt water, drain then heat some butter and a tinge of sugar and saute until sauce gets thick.
