Who knows a good recipe for Mexican rice? (to go with mole)?
I was recently given a container of homemade mole sauce which looks and smells absolutely delicious. I'll be preparing it with chicken but want an oustanding rice dish to accompany it. any ideas or links?
I think that the mole with chicken would be better with plain rice than with a spicy Mexican rice. The centerpiece of the meal seems to be your mole. It shouldn't compete with anything else that is spicy.
Go with white rice this time to let the mole show off. Save the Mexican rice for another occasion

Looking for Iraqi Dolma Recipe. Anyone can help?
I am looking for a specific recipe that is the best dolma I ever had! I cannot find it anywhere...
Various vegetables are stuffed in the same dish: vine leaves, aubergine, potato, onions, bell peppers etc
The filling/stuffing includes (among other ingredients): minced meat, basmati rice, tomato, cinnamon or all spice, cloves and most important an Iraqi spice called 'limoon aswad' or dry black lemon in English. Some also add roman/pomegranate/grenadine.
At the end, all the vegetables are covered with a lemony Tomato sauce and cooked in a pot or pressure cooker...
Anyone has the full recipe?

first of all its not necessarily an iraqi dish 
its mainly a turkish dish
this is all i can tell you
You need to mix the mince with your flavourings, add rice, it all stays raw for now. open vine leaves or whatever your going to use, then roll it up (vine Leaves) or put it in aubergine ect- after that you lay them in a pot neatly-
Then in another pot or bowl- mix boiling water with tomatoe puree, add some flavourings and lemon, make sure its not too runny or too thick- add it into the pot, make sure its enough to cover all of the dolma's and then put it to boil, it must boil for an hour or an hour and a half- it depends- you have to check it now and then- sorry for lack of information but hope it helped (they are really delicous 
)

Red, green, and yellow bell peppers. Is color the only difference?
Is there any nutritional difference between these peppers?
Also, they all taste the same to me, so why do recipes call for one and not the other(s), or just leave pepper choice as arbitrary?
No, they all taste different. Green is more rough tasting......red is less so, and yellow and orange you can eat raw really. (red too but yellow and orange are easier).

Hi.....
Does anyone know recipes for Chinese food prepared in Sri Lanka? Some people might think this is funny.....but Sri Lankans know what I am talking about.
Like Chinese special fried rice, chilly chicken....etc....and any good recipe for Sri Lankan restaurant quality dish.....

Sesame Chicken Salad
1 tablespoon (15ml) sesame seeds
3 whole chicken breasts
6 cups (1.5l) water
2 tablespoons (30ml) soy sauce
1/2 teaspoon (2ml) salt
1/2 teaspoon (2ml) fivespice powder
3 stalks celery
1 tablespoon (15ml) sesame oil
1 tablespoon (15ml) vegetable oil
1/4 teaspoon (1ml) ground ginger
1/8 teaspoon (0.5ml) pepper
Sprinkle sesame seeds into small, shallow baking pan or cookie sheet with sides. Bake in preheated oven at 350F (180C) for 5 to 8 minutes, or until golden.
Combine chicken, water, 1 tablespoon (15ml) soy sauce, salt and five spice powder in 3 or 4-quart (3 or 4 liter) saucepan. Cover and cook over high heat until water boils. Reduce heat and simmer 15 to 20 minutes. Remove from heat. Let chicken stand in water for 1 hour
Remove chicken from water (reserve water) and drain. Remove and discard chicken bones. Cut meat into 1/2 inch (1.5cm) wide slices.
Cut celery into diagonal slices. Heat reserved water over high heat until it boils. Add celery and cook until crisp-tender, 1 to 2 minutes. Drain celery well.
Combine remaining 1 tablespoon (15ml) soy sauce with oils, ginger and pepper in large bowl. Add chicken and celery. Toss until completely combined. Transfer mixture to serving dish. Sprinkle with sesame seeds.
Stir Fried Chinese Chicken with Cashews
1 egg white
1 Tbsp soy sauce
1 Tbsp cornstarch
1 1/2 lb chicken breasts, skinned, boned & cut into 1" cubes
1/4 cup soy sauce
1 tsp cornstarch
1 Tbsp dry sherry
2 Tbsp cider vinegar
1 tsp sugar
1/4 cup peanut oil
2/3 cup unsalted cashews
1 inch square of ginger, peeled and quartered
2 scallions, peeled and sliced
8 oz canned water chestnuts, drained and sliced
1 med green bell pepper, sliced
white rice, cooked
Lightly beat the egg white in a small bowl. Add the first measures of soy sauce and cornstarch. Mix well. Add the chicken. Toss thoroughly. Let stand for 15 minutes. Combine the second measure of soy sauce, the second measure of cornstarch, the sherry, cider vinegar and sugar in a second small bowl.
Mix very well. Set the sauce aside.
Heat the oil in a large wok or skillet over medium heat. Add the
cashews. Stir fry for about 1 minute. Use a slotted spoon to remove the cashews. Set aside.
Discard 1/3 of the oil. Add the ginger, sliced scallions and water
chestnuts to the wok. Stir fry for 1 minute. Add the chicken cubes, green pepper and sauce. Cook, stirring constantly, until thickened. Discard the ginger pieces. Return the cashews to the wok. Serve over hot, cooked white rice.

Anyone have any quick Chinese food recipes?
I'm having a themed dinner party with 8 people, and I need 2 more dishes to make. Any suggestions? I'm already making Sweet and Sour chicken with noodles/fruit/veggies on ChowMein noodles, chicken fried rice, and lo mein noodles in a soy sauce.
Anything without pork would be fabulous Thanks tons!
Try lychee salad.
Take three cans of lychee and drain them, but reserve about half a cup of the liquid. Slice 3-4 mangoes into bite size pieces. Cut up about 2 onces of crystalized ginger into little bits. Take 4 onces of ginger and use a garlic press and squeeze the juice into the liquid and blend in three teaspoons of hony. Then toss everything together. (add more fruit if you want.)

i'm looking for a good rice pilaf recipe. i like the rice they have at bennigans. i think it has corn, red bell peppers, and onions. do you know any good recipes that is similar to what i describe
Rice Pilaf
2 servings
Start to Finish: 30 minutes
Ingredients
1/3 cup long grain or basmati rice
2 tablespoons finely chopped prosciutto or fully cooked ham
1 clove garlic, minced
1 tablespoon margarine or butter
3/4 cup water
1 cup corn
2 tablespoons chopped sweet red or green pepper
2 tablespoons dry white wine, apple juice, or water
1/4 teaspoon instant chicken bouillon granules
1/8 teaspoon dried basil, oregano, or Italian seasoning, crushed
2 green onions, sliced (1/4 cup)
2 tablespoons pine nuts, slivered almonds, or chopped pecans, toasted
Directions
1. In a medium saucepan cook and stir the long grain or basmati rice, prosciutto or ham, and garlic in hot margarine or butter about 5 minutes or till rice is light brown.
2. Carefully stir in the water; corn; sweet red or green pepper; wine, apple juice, or water; chicken bouillon granules; and basil, oregano, or Italian seasoning. Bring the mixture to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or till the rice is tender and the liquid is absorbed. Stir in the green onions and pine nuts, almonds, or pecans. Serve immediately. Makes 2 serings.

Cook: 20 min.
Ingredients
1/2 cup chopped onion
1/3 cup slivered almonds
2 tablespoons butter or margarine
1 cup basmati rice, uncooked
1/2 cup finely chopped carrot
1/3 cup currants or chopped dried tart red cherries
1 teaspoon finely shredded orange peel
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper
1/8 teaspoon crushed red pepper
1 14-1/2 ounce can chicken broth
1/4 cup water
Directions
1. In a medium saucepan cook onion and almonds over medium heat in hot butter or margarine about 5 minutes or until onion is tender and almonds are golden. Stir in uncooked rice. Cook and stir for 4 minutes. Stir in carrot, currants or dried cherries, orange peel, cinnamon, black pepper, and red pepper.
2. Carefully stir chicken broth and water into saucepan. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until liquid is absorbed and rice is tender. Makes 6 side-dish servings.

What is the Indian fruit pudding served at buffets at Indian restaurants?
Sometimes when I would go to my local Indian restaurant there would be a fruity, custard-like thing. It wasn't rice pudding and I'm wondering if anyone knows what I'm talking about and if you have a recipe? Thanks.
Sounds like a fruit-variety of a dish called "kheer".
Another option is an indian dessert called "Fruit Salad", which is runny and custardy and with lots of fruits and nuts. No rice.

Looking for 2 cookie recipes?
I am looking for 2 cookie recipes...One is a soft chocolate cookie on the outside and has a coconut filling inside. It is almost shaped like a hershey's kiss after it is baked. The other is a soft chocolate cookie on the outside and has a peanut butter "suprise" filling inside. It is not the same as those peanut butter balls with the rice krispies in it and dipped in chocolate. It is actually a baked cookie. Thanks for your help!
I'll see if I have those recipes and get back to you. In the mean time make and try these-Chocolate Coconut Mound Cookies
3 cups flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1-1/2 cups sugar
1 teaspoon vanilla extract
1 egg, beaten
3/4 cup sour cream
Powdered sugar, for dusting
Filling:
1 cup flaked coconut
2 cups milk
1 cup sugar
3 tablespoons cornstarch
Sift together flour, cocoa, baking soda and salt; set aside.
Cream together butter, sugar, vanilla, egg and milk. Stir in dry ingredients. Chill dough.
To prepare filling: Combine coconut and milk in a pot over medium heat. Combine cornstarch and sugar; stir into milk. Bring to a simmer and cook, stirring constantly until thickened. Remove from heat and set aside to cool.
Preheat the oven to 375 degrees. Grease cookie sheets.
On a floured surface, roll dough to 1/8 inch thickness. Cut into 2-1/2 inch circles. Place half of the circles 1-1/2 inches apart on the cookie sheets. Spoon 1 teaspoon filling into center of each circle. Top with another circle of dough and press edges to seal.
Bake 8 to 10 minutes. Cool cookies on baking sheet 5 minutes then remove to a wire rack to cool completely. Dust with powdered sugar. Store in a single layer.
Makes 36 cookies.
