Restaurant Recipes Olive Garden
I'm a little nervous about cooking lamb chops for the first time- any pointers?
I have fresh rosemary from my herb garden. I do a lot of cooking, this is just one meat i've never tried at home. I've only even had it twice in restaurants. I live in the south where lamb is just not a common meat. Below, is my inspiration recipe, though I'm terrible about following them step by step. I usually just cook by ear.
8 (4-ounce) lamb chops
1/4 cup extra-virgin olive oil
2 teaspoons minced garlic
1 tablespoon finely chopped rosemary leaves
1 lemon, halved
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Preheat a hot grill and the oven to 400 degrees F.
Rub the chops with oil, garlic, rosemary, lemon, salt, and pepper. Place on the grill and cook for 4 minutes on each side. Put on a baking sheet and finish in the oven, about 5 minutes, or until desired doneness.
The recipe sounds nice, but you don't need to do anything to the chops for them to taste great.
I like to leave chops plain and put them under a hot grill - You need to use a high heat to make sure that the fat browns well - that is where most of the flavour is. I would give them about 5 minutes on each side, and see how brown they are - they may need a little longer depending on your grill.
You don't need to put them in the oven unless you want the meat well done. You can serve good quality lamb rare, although I prefer mine medium.
Mint is another very good accompaniment for lamb, which you could use in a similar way to the rosemary in your recipe, or add it to whatever you're serving with the chops.

Eggplant as Side Dish Recipe?
I am looking for a recipe for eggplant as a side dish. Something a little bit more complex than a simple roasting in the oven with olive oil, but nothing TOO complicated and using too many ingredients. I am getting tired of potatoes or rice as a side dish, and am looking for something new to try. Any ideas? I would prefer a posting of a recipe rather than a link, but links are OK too
ITALIAN EGGPLANT
1 medium eggplant, * see note
1/2 cup butter, melted
3/4 cup dry bread crumbs
1/4 teaspoon salt
13 ounces spaghetti sauce, with mushrooms
1 tablespoon oregano
1 cup mozzarella cheese, shredded
Dip eggplant in butter, then in mixture of bread crumbs and salt. Place in buttered casserole dish. Spoon spaghetti sauce on top. Sprinkle with oregano leaves and cheese. Bake for 15 to 20 minutes at 350 F.
* Pare eggplant and cut into 1/2-inch slices.
Serving Size: 4
FILLED EGGPLANT
4-5 eggplants (medium size)
1 c. ground meet
1/2 c. pasta sauce
salt and pepper

First, peel the eggplants. Leave the heads on them, and using a sharp knife, open the middle but try to make a hole coming out from the other end, set aside. In a separate pan, sauté onions then add the ground meat, the pasta sauce, salt and pepper add a little water then take one eggplant at a time, Fill the middle of each eggplant with one spoon of the meat sauce. In a separate pan, add a few tablespoons olive oil and place the eggplants side by side. Cover and cook on low heat for about 1/2 hour.

does anyone have any good vegan thanksgiving dinner recipes?
I'm going to a thanksgiving party and there's a few vegans in the bunch. I want to bring 1 or 2 dishes and wanted some ideas about what to bring and what tastes good (for non-vegans and non-vegetarians too). any good recipes? thanks for your help!
Skillet Spaghetti Squash
Ingredients (use vegan versions):
1 spaghetti squash
olive oil
1 to 2 garlic cloves, minced
1 can cannellini beans, drained
sea salt
black pepper
paprika
thyme
parsley
2 to 3 cups fresh spinach
Directions:
1. Preheat oven to 350 degrees Fahrenheit. Split squash in half lengthwise and scoop out seeds. Place halves cut-side down in covered baking dish, either oiled or with ½ inch water. Bake for 30 minutes.
2. When the squash is almost done, sauté garlic in olive oil in a small skillet. Add cannellini beans, stirring carefully to keep beans intact. Add sea salt, black pepper, paprika, thyme, and parsley to taste (but don't be too shy, because the seasonings are what give it a yummy kick).
3. Remove squash from the oven. Heat a large skillet with some olive oil (and more garlic if desired). Scrape the squash into spaghetti strings with a fork and transfer to the skillet. Add spinach and toss. Cover to speed up steaming of the spinach. When spinach is semi-wilted, transfer squash and spinach mixture to plates. Top with the seasoned beans and serve.
Source of recipe: Experimenting in the kitchen. You can experiment with different kinds of beans and greens (ie, perhaps black beans and kale) as well as other herbs and spices, but my fiancé thought this particular combination was very tasty. It's definitely a nice change from grain-based dishes, and it still leaves your tummy satisfied.
Makes: 2 servings, Preparation time: 15 minutes , Cooking time: 30 minutes to bake
Yams and Apples
Ingredients (use vegan versions):
6 to 8 yams
5 to 6 pippen or golden delicious apples
1/2 cup sugar
1 cup water
1/4 cup margarine
1 1/2 tablespoon cornstarch
1/2 teaspoon salt
Directions:
Boil yams until barely tender (whole or cut width wise, in big pieces). Peel. Cool. Slice and alternate yams and peeled apple rings in margarined casserole dish. Boil together: 1/2 c. vegan sugar, 1 c. water, 1/4 c. margarine, 1 1/2 T cornstarch and 1/2 t salt, until it begins to thicken. Pour over yams and apples and bake covered at 350 for 1 hr.

My family isn't big on turkey and I'm cooking Xmas dinner this year. I found a great recipe for roast pork and I was wondering what would be some good sides? Would the traditional sides work (dressing, veggies, etc)?

What can I do with leftover filet mignon?
I have six leftover filet mignon steaks. Unfortunately they are more medium than rare, so I just can't heat them up. I thought about using them in a crock pot recipe in place of round steak. Will that work out ok? Or do you have another idea? I have to feed my family of 9 tonight with them.
I had this with my leftover filet mignon the other night. I was very tasty if you enjoy pastas without a lot of "sauce".
Boil a pot of pasta in salted water, whatever you like, I used Ziti
Slice the filet into thin strips. Set aside.
Saute garlic in olive oil
Add sliced sundried tomatoes (oil packed work best)
Add the filet.
Saute for just a few seconds to combine. Remove from heat.
Drain pasta and return to the pot then add the saute to the pasta and stir.
Stir in some shredded mozarella cheese and grated parmesan cheese. Add the chopped basil at this point too.
Place in a greased baking dish. Sprinkle with both of the cheeses and bake at 350 for about 20 minutes.
I didn't overdo the cheeses, and all of the ingredients can be adjusted to your taste. I had the fresh herbs on hand from the holidays and it was freshly grated parmesan. The filet was already delicious to begin with and this was quite a tasty dish later in the week.

Recipes Macaroni Salad
Any good creamy macaroni salad recipes?
The only kind I've ever really loved was from a place called Pizza Village in Durham, NC which has unfortunately closed. I know they bought it, but none of the kinds I've tried from the grocery store taste the same and homemade is never creamy. Does anyone know what brand they used or have a good recipe for creamy macaroni salad?
CREAMY MACARONI SALAD
1 lb. elbow macaroni
1 pt. sour cream
1/2 c. light cream
Salt & pepper to taste
1/2 c. to 3/4 c. mayonnaise (optional)
2 c. diced celery
1 red onion, chopped
1 diced green pepper
1 c. shredded carrots
2 tbsp. pickle relish
2/3 tbsp. wine vinegar
Cook macaroni according to package directions. Drain. Mix mayonnaise, light cream, sour cream, salt and pepper. Add macaroni and vegetables; toss gently. Add vinegar (amount to taste). Chill. Serves 12-15.
