anyone have great Chili recipe?
im helping out with two special needs kids in a Chili cook off for a good cause, and it would mean the world to them if they won. they have been talking about it all week. so if anyone has a fantastic Chili recipe. please share. thank you.
every single time i make this people go nuts!
2 cups cubed cooked chicken breast
10.5 oz. can pink beans (undrained)
14.5 oz. can peeled whole tomatoes
15.5 oz. small red beans (undrained)
2-3 finely chopped garlic cloves
1 cup chopped yellow onion.
3/4 cup chopped green bell pepper
1/4 cup enchilada sauce
1-3 tsp. adobo sauce. (its hot!)
1.5 tsp. ground cumin
1.5 Tbsp. chili powder
1/2 tsp. red pepper flakes
salt n pepper to taste
On med-high heat liberally cover a large pot with cooking spray. Add onions and peppers and cook until soft, about 5 min. Then add chicken, garlic, adobo sauce, cumin, chili powder, red pepper flakes, and salt and pepper. Stir and cook for another 3 min on med-hi. Add all remaining ingredients and stir well. Make sure to break up tomatoes. Bring to a boil and then reduce to a simmer. Cover and continue to cook 30-40 min. Makes 4 servings. About 1 1/2 cup per serving
